  1. stress is a digestive deal-breaker for me. i keep a little xanax around for unavoidable bad news and i take it in tiny tiny doses - like i break the tablet into sixths - it seems to help my guts not turn to jello. a new job would certainly stress me out. soy (for me) will mimic gluten without the lasting effects so i eat as little soy as possible...
  2. about 6-8 months i went a little nuts, thinking i was "all better" AND i overdid it with stuff that bothers me less and less as time goes by: nightshades, soy, dairy, etc. also thinking that just because they SAID it was safe doesn't mean it is: my blood pressure meds - called the manufacturer and they said the drug was safe so i took them. ran out for...
  3. jenny: did you use frozen spinach? i used fresh/uncooked - i had my doubts when i started mixing them into the ricotta (which i used ricotta from the refrigerator case - sargento? i think)and i was thinking 'wow, it would've been easier if i had used frozen/cooked' but it started mixing together and the dumplings weren't hard to form and i had no problem...
  4. i have 'maseca' - is that the same thing? made by azteca milling out of texas. on the bag it has "corn: a gluten-free food" with the little 'no wheat' symbol. and also it is labeled kosher. lol - i bought it in new mexico when i was visiting my daughter but when i got home, i noticed they sell it at kroger

  6. how awesome! what nice neighbors you have beware of cc, though - one of the wonderful women in my bible study group made me a flourless chocolate cake when i was first dx'd and i was very touched and grateful. and sick... i don't know whether she cc'd me (in reality, probably) because i was new and didn't have any knowledge that bakeware/wooden spoons...
  7. my doc gave me a kit to do 3 samples on 3 different days - to determine whether i need to have a colonoscopy done (i am borderline age) but it has so many *rules* - no red meat, can't do it when your menstruating, can't do it if you have hemmoroids <which i do not but when i have D for any reason, everything gets raw = blood) no ibuprofen 2 days before...
  8. suz - i feel ya w/the urge to break glass sometimes! but i am not a destructive teenager anymore, so i have generic xanax i don't take the whole pill, just break off a little until i stop freaking out. freaking out also makes my hair fall out, so there's that (yay)(not) and, honestly, if i didn't have terrible GI issues and deadly weight loss and my doc...

  10. my husband never *ever* hears a word i say. he is so good at it, he can even reply (in context of the conversation) and forget simultaneously! i keep him around because he's so durn cute...
  11. pain in my left rib cage is the first sign for me that i have been glutened. headache follows (step two and confirmation that i have, indeed, been glutened) i drink, but only beer (redbridge) as even wine knocks me on my a$$.....
  12. lol i was just giving my daughter's boyfriend lessons in label reading. he hands me a box, i read then flip the box back over and give it back to him: nope. after about 4 or 5 products, he says incredously: WOW! you read soo fast! that's because i only read until i get to the part that says the ingredient that i can't eat...
  13. i avoid them like the plague! in the beginning i didn't and paid the price. MAYBE i won't get cc'd, but 1-2 weeks of misery isn't worth the risk.

  17. almost forgot - and this is huge for me - went 4-wheeling (you know, 'quad') in the mountains saturday and sunday i woke up just fine. first time that i wasn't absolutely wiped out (i have been limiting my activities because i was over-doing it) and yesterday i washed windows. big windows. alot of them. is this for real???

  23. ha i always blamed the cabbage/kraut on my indigestion but it was the BREAD! rudi's bread (original) was good instead of rye bread. my glutenators had regular rye bread so i figured why make a whole loaf. i toasted the rudi's pretty good so it wouldn't get too soggy. if you find a good rye bread sub recipe, though, or OMGOSH i would sometimes kill to...

  25. simona: i do use the leftover jars from spaghetti sauce, etc, when i am just doing hot water bath processing, like for pickles or jams, etc. but when i am pressure canning i have had trouble with having the jars seal properly unless i use the specified canning 'mason' jars. bubba's mom: how did your kraut turn out?? i can't eat rueben sandwiches...
