  1. don't feel bad - i have been gluten free for over a year and just the other night i almost contaminated corn salad with chili cheese fritos! at the last minute i read the bag..... REGULAR fritos are gluten free. NOT chili cheese. bummer, i have been hounding this woman from my church for the delicious recipe - it will have to be regular fritos next try...
  2. we had the biggest garden this year than we have ever had! i am sick of my pressure-canner! lol just kidding, i am really getting some use out of it this year. i am on the last batch of cukes and i still have green peppers and jalapenos left to put up. probably make jelly - love2, is your recipe sweet/hot? that is what i want, i think. so far we...
  3. yeah, i thought that, too: flour in the caramel. well then, i got a year to figure out how to transport a caramel apple in 900 degree heat without getting everything sticky beyond belief
  4. this turned out yummy - i mixed my own flour including almond flour but i suppose you could use any flour mix you regularly use for cakes hope you likey almond pound cake 2 c. sugar 1 c. butter, melted 4 eggs 2 1/2 tsp. vanilla extract 1 1/2 tsp. almond extract 3 c. gluten-free flour (the mix i used is at the bottom) 2 tsp. baking...
  5. i *was* eyeing up those fried potato trucks i wish (she says dreamily, lol) if they had a dedicated fryer and potatoes were the only thing they made, they would put up a sign, even a tiny one <because i would see it! that said 'gluten free' - there wouldn't be anything funky in the frying oil otherwise? you would think. and some of the apple stands...
  6. haha! my grandkids are the only people who ask me if they can eat my food! they love it and i cook alot so i don't mind sharing - i love it when they tell their mama "we don't want that kind. we want meemo's kind!" learn to cook, for your tastebuds' sake! ugh, no wonder everybody gets depressed when they start this diet - the processed substitute...
  7. so, last year at this time, i was about a month in to the gluten-free diet. i was still figuring things out. every year our family does the tennessee valley fair in knoxville. it's a big deal: about 4 carloads of people every year (and that's not even all of us lol) anyway, last year i brought a gluten-free sandwich, a juice, and a larabar. i brought...
  8. i just passed my first year mark last month. i am still tired as krap. but everything seems to be evening out and i hardly ever get sick anymore (ugh, i probably just jinxed myself) my muscles are rebuilding well - i have a doctor's appointment on the 30th and that is my major basic question: *when* am i going to quit feeling soooo tired?? i can't get...

    ARCHIVED Knoxville, Tn

hey to all you east tennesseeans just wanted to let y'all know: there is somewhere to eat at the fair! they have a petros (like chili/frito type thing) vendor there - they will make them vegetarian or omit dairy, etc. basically chili, cheese, fritos, sour cream, onions, etc. i quizzed the guys manning the truck and they were very knowledgeable about...
  10. flour or no flour - if he's creeping you out, get rid of him! i had a stalker it is NOT FUN! he was a convincing LIAR and he had things alll planned to take advantage of my sympathy. it took a long time to get rid of him and even longer to be able to sleep at night. trust your instincts - if fiance needs convincing, tell him to watch the movie ...
  11. some things i just need to eat in moderation. i'll be fine eating (say, peppers for example) a little one day or in a meal but if i have leftovers for lunch the next day i will have trouble digesting them - for some reason?? i don't know why. but if i eat something different, 'safe food' lol (<tuna sandwich on udi's!) in between then i am fine eating...
  12. raven: lookit the love for you in this 'tribe' ((((hugs)))) from me, too - and so much appreciation for the HUGE help you have been to so many of us on our crazy journey. i am not much of an animal person. that being said (also very allergic) my daughter left for college last week and 'dumped' her cat here with the agreement that he would live outside...
  13. (((hugs))) it's rough sometimes! it's ok to come on here and vent - nobody understands like we do, trust me. but if you need to get help to get over this bump in the road then get somebody to counsel you. NOT your "friends" - jeez... who the krap would do that...
  14. when i get stressed it throws my whole entire digestive system off. if i eat a tiny (like 1/4 or 1/8) of a xanax when i feel it start, it wards off the days of D. and i am definitely celiac (endoscopy dx positive also tested for crohns negative) my prescription for xanax is for when i travel i take 1/2 a pill and it will make me two dwarves: sleepy and...
  15. i was also cooking "instinctively" nearly gluten free as well before i was diagnosed! it was wierd. mostly whole foods, fresh veggies, etc. almost no processed foods. the hardest change was breads/pastas. and Krispy Kremes. which should be it's own food group.... (raspberry jelly filled little poison horrors, how i miss you! lol)
  16. you're wrong. LOL although i am in the USA. always always read the labels.
  17. to me, communion is about atonement, not suffering. i don't remember the part in the bible where it says Jesus had D for me. but whatever floats your boat. i bring my bread in a little snackie bag to church and take it out and eat it at the altar where everyone else is receiving the host and the pastor blesses it along with all the regular bread...
  18. how awesome!! i know *exactly* what you mean - i was 'letting things go' aka not making phone calls/answering calls. general anxiety about everything. but - after a year gluten free - recently i DROVE MY CAR 750 MILES to visit family. travel is one of my favorite things ever and i couldn't drive without freaking out/vertigo/etc. my husband couldn't believe...
  19. be happy that you are still relatively young! i was 47 years old and had been suffering for 25 years when they finally got it right - and starving to death, literally. i missed my kids' whole childhood and beyond - sick all the time, miscarriage, had to quit college because of a 'mystery' hospitalization, etc., etc., - not to mention all the $$$$$$$ spent...
  20. LOL i had one (nightmare) this morning that i was heating my last piece of The Most Awesome gluten-free Pizza Ever (doesn't exist, sigh, it was a dream...) and somebody chucked a huge piece of italian bread on top of it!! you know you're gluten free if all the inbox photos on your phone are pictures of grocery packages or ingredients (my husband lol is...
  21. coolio - i am thinking of adding 2 more cups of cereal and baking them @350F for 20-30 min (add choc chips when they come out of oven) to see if they would survive not being a frozen treat and i could keep them in the pantry in the cooler weather. as soon as this heat lets up!! wow, it's so hot... i don't want to turn on the oven... also, i wanted to add...
  22. if you do, please let me know how they came out i would love the input - thanx!! arlene
  23. well, it seems like every snack/energy/cereal bar i have tried doesn't agree with me for some reason or another. so i made my own and they came out delicious. i am still tweaking the 'glue' made of heating (2 T) butter, (1/2 c) peanut butter and (1/4 c) brown sugar (1/2 tsp) kosher salt - when that is melted, put in a big bowl and then mix in 2 c. of...
