  1. I'm intrigued with the fish pie...would love details... Tonight we had fish filets, marinated in fresh herbs, lemon juice and olive oil and minced green onion/serranno pepper, wrapped in parchment paper and grilled, along with grilled new potatoes and summer squash. I just add chopped onion or chopped green onion to the taters and drizzle olive oil...
  2. Hi MNMAC, and welcome to the forum. I'm not an expert, but I'll tell you what has helped me when I've had excessive "D". I drink clear broths (like gluten-free chicken broth), eat bananas and blueberies, rice. Blueberries have the same ingredient as kaopectate. I've never had a problem with sweet potatos or avacado. It may be helpful for you to...
  3. This really works. Heat 1/4 cup prune juice and drink it. (Heating is essential.) Warm up 1-2 T. honey (in tea, or on it's own) 10 minutes later, and drink it. (For some reason, honey helps with the stomach pain associated with constipation.) Exercise if you feel well enough to do so (walking is good). This works wonders in an hour or two...
  4. I had hyperparathyroidism, and a parathyroidectomy. The surgeon removed 3.5 of my parathyroid glands. I'm absolutely, 100 percent sure that the gluten-free diet can avoid surgical intervention of the paratyroid glands if you have celiac disease. I found out about celiac sort of upside down. Had the "moans, groans and bones" associated with hyperparathyroidism...
  5. I'll step up and say that buckwheat is ok, especially when you make it with honey and sliced bananas, kinda like having banana cream pie for breakfast. But you might want to simmer down on trying new things (especially grains and mixes) to let your system simmer down a bit. Chick pea flour makes really good veggie or seafood fritters. (And my favorite...
  6. Ya'll are making me jealous! Yumm! Tonight we had grilled pork steaks that I marinated in orange juice & s&p with brown rice, stamed swiss chard and roasted mushrooms and a little bit of fresh pineapple. And one small piece of dark chocolate for dessert. Not bad.
  7. Even though it costs up front, I love my 5 pound pressure cooker. It cooks everything very quickly, and you can make one dish meals that are delicious, so there is very little clean up. I've made a ton of things in my pressure cooker since I received it for Christmas: roast beef twice (1 hour, but the best I've ever had), split pea soup (15 minutes...
  8. I've had a loaf of gluten-free bread in the freezer for about five months now. I use it to make breadcrumbs for salmon cakes or meat balls, or stuffed mushrooms. And even though I used to make homemade breads and pies, etc. I'm completely off desserts except for an occasional cobbler or fruit, or a piece of dark chocolate. (The cobblers have been ok...
  9. Walleye Pike wrapped in banana leaves (and aluminum foil) that marinated with thai fish sauce, chopped garlic, lemon grass, (could sub any citrus), spring onions and serrano peppers, then grilled. Had that with white taters for dbf, sweet tater for me, and some fresh steamed green beans. Yum. Had a piece of dark chocolate for dessert. Put some yummy...
  10. You have many better days to look forward to after you have btter nights (without cupcake nightmares). Plus your body will be absorbing the minerals and vitamins in the food you eat... things will get better. I'm not even tempted to eat foods with gluten, but I miss dairy products to bits.
  11. One of my chief complaints when I was trying to figure out what was wrong was insomnia. If I get glutened, I still have sleepless nights or trouble sleeping. For months, days at a time, I dreamed of eating a hotdog bun (with hotdog, just off the grill) at a party. I'd just inadvertently pick up a hot dog with a big fluffy hotdog bun and eat it. Then...
  12. My brother called me today to tell me about this broadcast. Here's a link. Open Original Shared Link I thought it was interesting and thought provoking, even though this piece centers more on childhood allergies vs. adult onset food allergies and intolerances. One of my thoughts were that I haven't come down with the flu or a cold since...
  13. It also helps to eat foods you've never, or rarely, eaten before. Wierd fruits or vegetables, meats. Allergy skin prick testing helped me, I was right about some things I'd eliminated, wrong about others. And I've found it helpful to try and not eat things from the same food family on consecutive days. Mix things up. Protein, oil, starch, vegetable...
  14. I absolutely had the itching and tingling sensations before being diagnosed, but no swelling. Hair loss too. There are quite a few British medical articles written about neurological deficits and celiac disease. I had a lot of problems going up and down steps, profound depression and insomnia too. I was diagnosed pretty late in the game. I still...
  15. We had Tandori chicken (grilled dry rubbed skinless chicken thighs) with roasted new potatoes (cut in chunks, mixed with s&p, olive oil and chopped spring onions, then wrapped in aluminum oil & grilled) with fresh green beans. I've been on an Indian cuisine kick lately. Everything tastes so good and makes me feel good.
  16. Breakfast is the toughest meal for me too. Sometmes it's just macadamia nuts, sliced banana (can't be very ripe) and green tea. I can handle bacon sometimes, if it's really lean (center cut) and an egg, but I cut out the yolk because it turned up that I'm allergic to egg yolks. I try to have snacks that compensate for my lack of breakfast. Any kind...
  17. I'm really interested! Please post your recipe...
  18. Dear Catarific, I'm now ten months's gluten free and starting to feel a bit like my old self. I was thinking about your post today and trying to think of something you could eat. If you can find carnival squash locally, it is very buttery and sweet tasting and could be nice for breakfast (I had it for dessert tonight all on it's own (no spices or...
  19. SORRY! I forgot 1-2 diced serrano chili peppers. (I use one, with the seeds, and it's spicy enough.)
  20. Freeatlast, I have this recipe memorized. 1 cup chick pea powder 1/4 cup rice flour 1 tsp salt 1/2 tsp cumin seed (I use a tsp) Mix together, then add 1 cup water, sometimes more to attain the consistency that Manula shows on the video. Add 1 cup shredded zuccini (skin on). You can add/subtract zucchini for chopped green onions and/or carrots for...
  21. I LOVE this Indian flatbread I found on you tube, and so does everyone who has tasted it. I use 1 1/4 cups Handva Flour (from Indian Grocery store, a mix of rice, chick pea, pigeon pea and lentil flour) vs. the chick pea and rice flour in the recipe. Cumin seeds are high in iron, and really tasty. If you freeze your left over flatbread and...
  22. I'm 6' tall and weigh in at 135 lbs, and take daily tongue lashing from (mainly female, and mainly overweight) people who feel it is perfectly okay to comment on someone's body. When I was overweight, nobody said a word. My PCP was so nice. She said "So many women would pay so much money to have a body like your's." "They'd have surgery, which...
  23. I lucked out tonight! I took my neighbor half a melon, about half a lb. of fresh green beens and some lovely Italian ham. She sent me home with chicken chili, two avacados and mango chutney. She's one of the people on a very short list who I trust to cook for me. The chili has peppers, onion, chicken, celery, two kinds of beeans, tomatoes and cinnamin...
  24. I've been gluten-free for about 8 months, soy and dairy free for about 6 months. I went corn free about two weeks ago after a particularly horrid reaction to corn. I just had skin prick testing at an allergist's and it turns out that I'm allergic to pecans, egg yolks, wheat and rye. None of of environmental allergins popped up positive. I've never...
  25. I thought about this post today, and thought a proper response to some relative ranting about us not eating their contribution could be... "Aunt Pearl, thank you for bringing your wonderful peach cobbler, you know I've always loved it. If I eat that today, though, it's like shooting myself in the foot! It won't kill me, but I'll be miserable for for a day...
