I found that I couldn't handle quinoa, the protein is too similar to gluten. Have you tried eliminating quinoa? I've found it safer to make my own vegetable or chicken stock for soups, and it saves money. I'm pretty sure that Europe is fairly keen on gluten-free diets. If not, you can stick with salmon and smoked salmon (you lucky girl) and potatoes and cucumber slices and salads with plain dressings. I bet the bangers and mash are fine, and beans. (Heinz in gluten-free) It would be good to hit the travel thread before the trip, I'm sure you'll get good... -
You've received great advice. I also suggest searching for lunch ideas on the forum. Change is always difficult, but you'll learn new skills (like chopping, cooking, packing, preparedness.) Lara Bars are spendy but good. It helps to eat every two or two and a half hours. You can pack PB and an apple with a peeler and knife if you don't want to...

I discovered a wonderful brand at Wal-Mart today... La Banderita Corn Tortillas. They're preservative free and the ingredients are: CORN, WATER AND LIME. OMG they're delicious. And they were $1.50 for 1.5 pounds of them. (A stack as high as my fist.) I hope your local Wally World stocks them. These are infinitely better than any commercially available... -

I think you'd bake it at 350. And It won't get dry. You could probably substitute coconut oil for the crisco or butter with good results. I can't do quinoa, hoping oats will work for me, but not ready to try just yet. -

She rolled her eyes at you! I just hate that! She didn't squint, and her teeny weeny little forehead didn't contract in a wrinkled, questioning expression, she rolled her eyes!
