Hi ladies. I'm assuming everyone who responded to the eating safely in WDW was a mom, so I do apologize if any dads responded. We just got back last night and we had a really positive experience. Disney has a policy that if there are allergies the chef or manager must come to the table and go over the menu. I should say, if you're in a restaurant. Anyhow... - 
	I just got the book about the SCD. I know that's our next step but we aren't mentally there yet. My daughter and I are both underweight, and I know the diet isn't recommended for people who are underweight, esp. in children. So, I need to do more research and then decide if it's right for us.

	I concur about the testing. All my daughter's and my own testing was "normal" However when I did elimination diets and then re-introduced foods we had very specific symptoms for each food. I even tried the foods twice just to make sure it wasn't something else going on, like some random virus. I believe most of the testing is very very primitive. I think...

	My reaction to corn is the same as my reaction to gluten...except with corn I also get itchy skin and hives. My daughter is very allergic to corn, and esp. corn syrup. 	Poor Mama and poor baby. Before I went gluten free, there were a couple of times that I wasn't sure I could get myself to a bathroom. It was that sudden. 	Since going gluten/dairy/corn free my headaches have really abated. It used to be I could have a migraine for days. Now I will get a headache if I need to eat. 	We just had dinner last week at my wonderful SIL's house. She was so generous and bought us gluten free bread and gluten free noodles for spaghetti. Thankfully my daughter's school banned most of these parties just this year due to so many food allergies. She does have an ice cream party this Friday as a result of a successful Read-a-Thon that she'll miss because she'll be at WDW (poor kid). I did find that site (corn allergens) today while doing my research. It's a really good one but now I'm completely overwhelmed. It's just in everything. Dixiebell, that site is very helpful. It tells me a lot of ingredients to avoid, which I'm getting much better at. Now my biggest problem is finding substitutes. Not necessarily with food as I prepare all of that, but more with products such as toiletries. I will bookmark that page for sure. -

I apologize for this not being a gluten post. My daughter is 7 and she is gluten/soy/dairy AND corn free. The corn is the most severe of her intolerances and it's one step beyond because she's also VERY allergic. Corn is in every dang thing. My daughter (7) went to a birthday party at McDonald's the other night, with her own food. Before that the girls had been at the swimming pool, and I think because my daughter was the only one who didn't go to the birthday girl's school, she was already being teased and bullied a little bit at the pool. 	It's funny you bring this up. I always get a little bit of a stomach ache, but my little daughter always gets sick. Last time she had a filling she got a rash, which made me suspect there may have been corn in something. Are there dentists willing to check? I'll have to look into that.

Forgive me if I am misinformed, but I don't think there are tests for gluten intolerance. I think it's based on how you feel and how you respond to the diet. I would be floored if my daughter's school refused to let me feed her and would continue to feed her foods against my wishes with or without a doctor's note. People have to build up a tolerance to gluten? That is alarming in and of itself. I believe (just a theory) that celiac is just one part of gluten intolerance. Some people who are gluten intolerant may develop celiac, while others develop anxiety, thyroid problems, diabetes etc etc. Whatever the real story is I know this much. My first mishap was about 8 weeks after going gluten free. I was on vacation and thought I'd just be one of those people who had gluten when it was too hard to be gluten free.
