Yes. I think you need to stick this out while your system adjusts. I discovered my intolerance to gluten (and dairy, soy, caffeine) while on a detox diet so I felt awful for 2 weeks. Before this (self) diagnosis, I had perfected my pizza crust, and my spaghetti recipe. I'm sorry your girlfriend is struggling. This reaction, including the joint pain sounds so similar to my symptoms. I'm only 5 months in. I have good days and bad days. I don't understand how Celiac's could be over diagnosed? If you have a positive test you have it right? And if you do an elimination diet and you feel better, and by better I mean no more D or C, no more migraines, no more joint pain, no more brain fog...maybe you have an issue with gluten and shouldn't be eating it? Absolutely. And it's a relief to hear it's common. As of right now I have moved to a completely whole foods diet. When I first started this diet I felt great cutting out dairy and wheat. Now I feel like one slip will send me on a downward spiral for days. I avoid wheat (obviously), dairy, corn, soy, wine, and coffee and am now wondering about eggs... -

Yes I've been tested for a wheat allergy. I am NOT allergic to wheat. Gluten intolerance is a self diagnosis...but years of arthritis, brain fog, migraines, stomach issues, brain fog, fatigue cleared when I eliminated gluten. -
