  1. I was making food only for myself tonight. This may be gross to everyone else, but I made 1/2 bag of California mixed frozen veggies, 2 tbs chopped fresh shallots, 1 can of salmon (drained), and a couple big squirts of wasabi mustard. I nuked the shallots with the frozen veggies, then added the salmon and wasabi mustard and stirred. Simple, easy food with...
  2. Curry rice with steak, as follows: long grain brown rice cooked in chicken stock with turmeric and curry powder, chopped shallot + minced garlic + frozen peas + frozen chopped green pepper steamed in chicken stock on the rice cooker, chopped hard-boiled egg whites, cubed steak leftovers (marinated in soy sauce, roasted red pepper flakes, garlic, and shallots...
  3. This was only my first trip to Vegas and my first vacation with Celiac, so we stayed on the strip and did the big, tourist-friendly hotels. I found those the easiest to deal with because their whole motto is customer service. I personally find it easiest to eat at big, fancy restaurants or fast food chains. Some family restaurants are great because they want...
  4. Steaks marinated with soy sauce, garlic, shallot, and red pepper flakes since yesterday. Steamed broccoli with a bit of olive oil and some garlic salt.
  5. Check out this post I made, detailing experiences I had in mainly non-chain restaurants. In-N-Out Burger and Burger King (and other chains with which you might be familiar) are of course also options. Please let me know if you have questions about any of the stuff from that post, but hopefully that will be helpful to you.
  6. What would we do with the wheat fields and unemployed farmers? Rice is currently mostly grown outside the USA, I think. I don't know about tapioca. We'd have a hard time competing with China's rice production and I think our economy would have some Major-League Issues.
  7. You could have Panic Disorder or another problem that coincidentally popped up when you went gluten-free. Or maybe you were so focused on the glutening symptoms that anything else just wasn't on your radar at the time. Do you have a good doc? There are meds to help you with this kind of thing and it's worth getting some levels tested to make sure it's not...
  8. I'm the only one. My sister has been diagnosed IBS but doesn't think she has Celiac and doesn't want to get blood testing done while she's still eating gluten or go gluten-free. She's happy and quite healthy, so for now I'm not arguing.
  9. Dried beans are relatively cheap (or canned beans, if you're lazy like me). Chili is still a great option for many of us with Celiac because it's easy on our budget and high in protein and fiber. Some tips on staying healthy: buy frozen veggies instead of fresh for recipes like chili (often cheaper, on sale, store brand, etc.), cook as much of your own...
  10. I always feel extra bloated (on top of what I ate accidentally) so for me, the answer is no. If I accidentally eat 2 bites of wheat pasta at the beginning of a meal and stop there, I'll feel bloated and full but not overly full. But I get symptoms for a week afterward (bloating, diarrhea, etc). So it's not like it's a walk in the park, but not eating does...
  11. When in doubt, blame the pregnancy for nausea. Especially in the first trimester. And then later for all the reflux ...
  12. Yeah. They're trying to give you a huge glucose load and make sure you can process it appropriately. There shouldn't be anything wheaty in it at all. Good call with the double-checking first, though!
  13. Yes. I was heartbroken when beer was no longer my friend. I had so few years of enjoying beer ... but at least I do like red wine. I don't particularly like harder alcohols, so I'm left with only wines as my sources of ethanol. And red is my favorite! But at least there can be some variety by adding white. And for New Year's: CHAMPAGNE!
  14. Yeah, tequila is NOT my friend. I prefer red wine. That's easier to drink more slowly ... I tend to die a little every time I meet tequila.
  15. I'm cooking this hot and sour soup recipe to use up all my Christmas dinner turkey leftovers, along with some other things I had sitting around (half a package of tofu, an onion, some dried mushrooms, 3/4 carton of chicken broth, the end of a bottle of soy sauce, etc).
  16. Congratulations! Keep doing it the healthy way. What awesome progress!
  17. Don't forget options like fast food burgers without the buns! Those have saved me in many a tight pinch. They're filling and terrible for you, but you can always get a double-burger, no bun, and make sure they change their gloves before they prepare it. Should be easily available past security in the airports. Then you're only worrying about while you...
  18. Do you do short, medium, or long grain brown rice? I'm trying to get my husband to convert over to brown rice from the traditional white rice.
  19. You'll want to vary your protein sources if possible. My personal opinion is that you want to eat as many different things that don't make you feel bad (or set of a big positive blood test result) as possible. With the almonds, I'm not sure - maybe ask your doc for a retest later for that and keep eating them for now, as long as you're not getting symptoms...
  20. For those of us with pop-related issues, I think gluten is not the culprit. Sometimes it's the carbonation, the particular acid in pop (I think that's my problem with brown colas), or the artificial sweetener. But with standard pops, it's not a gluten thing. But as with any good Celiac, even when it's not gluten, it can totally be something else making...
  21. I have an unrelated stomach issue with Diet Coke. It's not glutening, it's something to do with the cola. I miss my Diet Coke sometimes, but I just can't drink it. I don't have a problem with other artificial sweeteners or sweetened products, either.
  22. Honestly, I'm not sure why a person would have fructose malabsorption. Fructose crosses to the bloodstream without the assistance of anything else (no transporters, no energy required). I don't know how you could have malabsorption of it. It diffuses by itself based on a concentration gradient (more fructose within the intestines than within the cells and...
  23. I can cut it down to 1-2 times per day if I'm off gluten, but if I get glutened I get up to 4-5 times per day. La Choy soy sauce is gluten-free. So is the Kroger brand soy sauce in my area (check your local labels to be sure though!)
  24. For what it's worth, I bet the carpal tunnel syndrome was real. That's becoming more and more common as more people spend lots of time on the computer. The carpal tunnel is a restricted space and the median nerve, which is trapped inside of the carpal tunnel, can become irritated quite easily. So please keep your computer use and writing within more normal...
  25. Did you check to see if the levothyroxine has gluten in it?
