ARCHIVED Toddler Refusing Food. Help!
Kelleybean replied to MommyB1234's topic in Parents, Friends and Loved Ones of Celiacs
My son is very sensitive to texture. At age 3 he won't eat meat except the occasional hotdog and will only eat baby food veggies (not in any other form no matter how I cook it). So it's been a challenge getting him a healthy diet. Couple of things come to my mind ... feeding him smaller meals, more frequently. I actually wonder if feeding him in front... -
Hi - I have a strange question. My son is on a gluten free/casein free diet for 4 months not b/c of celiac but b/c of autism. We did not notice any dramatic improvement with the diet, but that might have been b/c we made the transtion VERY slowly. We reintroduced a little casein and he did fine. Next we want to test him on a small amount of gluten to...

ARCHIVED Does Anyone Have A Good Icing Recipe
Kelleybean replied to freeatlast's topic in Gluten-Free Recipes & Cooking Tips
Not sure ... coconut flour is a little sweet which probably makes it work in this recipe. White rice flour maybe? I have made it several times, including for my son's 3 year old birthday last week. He ate off all the frosting then wanted a second piece so he could have the frosting off that piece too. And it goes together really fast. -
ARCHIVED Cold Lunches - What To Pack For My Son?
Kelleybean replied to SandraD1971's topic in Parents, Friends and Loved Ones of Celiacs
Udi's bagel with tofutti cream cheese, rice cakes with sunbutter (or again tofutti cream cheese if he can't do dairy), my son actually likes dry cereal sometimes. You could make your own "lunchables" - gluten-free crackers, slices of cheese, etc. I make muffins using Namaste muffin mix (prepared to package directions) and add 1/2 c applesauce and a couple... -

How about this one: Open Original Shared Link I used Enjoy Life chocolate chips, and it came out great! Super easy too. -
ARCHIVED 100+ Ways To Make Rice
Kelleybean replied to GlutenFreeManna's topic in Gluten-Free Recipes & Cooking Tips
Rice milk? I haven't tried it yet, but have been making cashew and almond milk. -
ARCHIVED Hot Dogs And French Fries gluten-free?
Kelleybean replied to SJD's topic in Parents, Friends and Loved Ones of Celiacs
We do Applegate Farms hotdogs. They are a little pricy, but I like that they don't have any nitrites in them. -
The What's For Dinner Tonight Chat
Kelleybean replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
We made the cream sauce from cashew milk from the Spunky Coconut, added it to some gluten-free pasta and added a can of chickpeas. My picky 3 year old ate it, so we're adding this recipe to our rotation. -
ARCHIVED Casein Free Products
Kelleybean replied to Kelleybean's topic in Gluten-Free Recipes & Cooking Tips
Great! We love their cream cheese. -
My soon-to-be 3 year old has decided that he is going to skip his nap most of the time (even though he totally still needs them), which means sometimes he's sleeping later in the morning. He's autistic and on a busy therapy schedule, so this might mean breakfast in the car occasionally. Anyone have a preschooler-friendly, healthy breakfast bar type...

ARCHIVED Celiac Disease And Dyspraxia
Kelleybean replied to mikyraso's topic in Parents, Friends and Loved Ones of Celiacs
My son is turning 3 on Monday (which I still can't believe!). He's been gluten-free since January, casein free for about 3 weeks. We have not noticed a big difference, but we phased into the diet very gradually. So by the time we went completely gluten-free he had already been almost there for several months, so that may have masked any big improvement... -
ARCHIVED Dairy Free/soy Free Muddy Buddies?
Kelleybean replied to GlutenFreeManna's topic in Gluten-Free Recipes & Cooking Tips
I don't know about this recipe in particular, but I did sub Earth Balance for butter in a chocolate chip cookie mix and they came out great! I'll bet it will work. -
ARCHIVED What To Feed A gluten-free Toddler?
Kelleybean replied to mammato5's topic in Parents, Friends and Loved Ones of Celiacs
I can't remember what age we started giving these to my son but this is what comes to my mind - small bits of watermelon, tangerine slices, squished blueberries, broken up waffle, rice cakes, envirokids cereals, and muffins that I doctored up the mix. -
ARCHIVED Birthday Cake Recipy
Kelleybean replied to ValeriaZ's topic in Parents, Friends and Loved Ones of Celiacs
Hi - Not a recipe, but I wonder if you can have this delivered: Open Original Shared Link We have one locally and had some of their cupcakes ... they were incredible! I liked them better than regular. Vegan, so no eggs or dairy. -
ARCHIVED How Long To Try Gluten Free?
Kelleybean replied to kimtn's topic in Parents, Friends and Loved Ones of Celiacs
We are going to give it 4 months (my son is autistic). Our logic is that we wanted to give it long enough to know for sure and that it is easiest for us now while he is young - our son is 2 - since we have more control over his diet. I've read that it can take several months for gluten to leave your system. -
ARCHIVED Butter Substitute For Baking
Kelleybean replied to Kelleybean's topic in Gluten-Free Recipes & Cooking Tips
Stupid question ... I got some coconut oil about a week ago. Haven't opened it yet but it looks fairly solid. There is a cake recipe I want to try that says "liquified coconut oil". Is that a different product? Or do I need to do something to the oil in the jar I bought? -
ARCHIVED Gluten-Free Bread Suggestions
Kelleybean replied to K8Hanna's topic in Gluten-Free Recipes & Cooking Tips
Udi's by far is the best that we've tried. Also really like their bagels. -
ARCHIVED Gluten Free Pizza Crust Mix
Kelleybean replied to thindery's topic in Gluten-Free Recipes & Cooking Tips
We tried the pizza crust recipe using bisquick and did not like it at all - it was very sticky and "ricey". It's not a mix but the Udi's pre-made pizza crust came out OK. -
ARCHIVED Butter Substitute For Baking
Kelleybean replied to Kelleybean's topic in Gluten-Free Recipes & Cooking Tips
Thanks for the info about Earth Balance. Used it for cookies and also scrambled eggs and worked really well! -
ARCHIVED School Lunch Ideas
Kelleybean replied to Esther Sparhawk's topic in Parents, Friends and Loved Ones of Celiacs
Bagel and tofutti "cream cheese", PB&J made with sunbutter (I know some schools won't let you send peanut butter b/c of allergens so we've been using sunbutter), muffins with stuff sneaked into the batter. I like an idea I saw on this forum a while back with bento boxes that let you send a bunch of different things rather than a sandwich and side. -
ARCHIVED Celiac Disease And Dyspraxia
Kelleybean replied to mikyraso's topic in Parents, Friends and Loved Ones of Celiacs
Hi - I don't know about dyspraxia specifically, but my son is autistic. I know it's competely different, but some parents have reported big improvements in their child's speech after starting a gluten free diet with their autistic kids. So it wouldn't surprise me at all if there was a link for other conditions too. -
Hi - We are transitioning my 2 year old to a casein free diet, and I was wondering if anyone could suggest some alternatives for us. 1) A Gluten-free Casein-free yogurt - we got the Ricera and he hated it. Anything else? 2) Is there a decent boxed mac and cheese type thing? Right now we use Annie's gluten-free mac and cheese which obviously won't...

ARCHIVED What To Eat At Wdw In Florida
Kelleybean replied to mikyraso's topic in Parents, Friends and Loved Ones of Celiacs
We live in Orlando so we go to Disney quite often. Some of the restaurants have gluten-free pizza and Amy's mac and cheese (I'm sure they have more sophisticated items - my toddler is the one who is gluten free so we gave him the Amy's). I can't remember what it's called but there is a bakery on Main Street that sells decent prepackaged gluten-free chocolate... -
Hi - We are currently gluten-free and are currently switching my 2 year old over to casein free. Once we remove dairy from his diet we want to have the option of supplementing his protein intake with some smoothies every once in a while. Can anyone recommend any brands of Gluten-free Casein-free protein powders that we can throw into a smoothie? He's...

ARCHIVED gluten-free And Autism
Kelleybean replied to glutenjunkie's topic in Parents, Friends and Loved Ones of Celiacs
We are only gluten free right now and have not noticed any dramatic changes (we were low gluten before this so I wonder if that made it harder to tell too). We're going to try removing casein next, which is actually for us going to be harder than gluten. There are so many great gluten-free products out there, but good casein substitutes for us have been...
