I can't say that there is really anything GOOD about Celiac. But, I can say that Celiac is a better alternative than what it COULD be. I know someone who's infant was tested for all sorts of horrible diseases before they finally figured out she had celiac. Needless to say, by that time they were thrilled with the diagnosis. Another lifetime sugar addict who can now eat sweets in moderation. I figured that my body was craving the fastest energy it could get, since it wasn't absorbing the nutrients from the food I was eating. Not that I'm the picture of self-denial, but I actually passed up a BUTTERFINGER today, simply because I didn't want it. Unheard of! -
I like to incorporate soup at least once a week in my family menu. Not only is it easy to make gluten-free, but its cost efficient as well. And, in the arctic north here, it lovely to curl up on the sofa w/ a cup of hot soup on a blustery winter night. The cauliflower recipe sounds delish! I've been looking at the amaranth in my cupboard and wondering how close that would be to couscous if I cooked it in chicken broth. -
I make my own from brown rice, then cook it up w/ milk and a dash of home made vanilla extract. Sometimes I slip a little maple syrup in it. The brown rice tastes and has a texture reminiscent of steel cut oats.

I like to throw one salad meal in my regular weekly menu. Sometimes its just "salad bar night" and sometimes its more of a prepared salad. In my experimenting stage, I once bought something called "fufu" flour, made (I believe) from bananas. As the box specified it was for African dishes, you might be able to find that more easily in your area. Another "secret" on the chex cereal is that it always goes on sale before a holiday, because "chex mix" and "puppy chow" are such popular party snacks.
