That's interesting because I used the same amount of lard to re-create my mother's to-die-for pie crust recipe. I almost gave up on pie dough made with alternative flours (blech) until I had the brilliant idea of using lard. The real test was when my MOM was here at Thanksgiving (she's gluten-free now, too ) and all of us thought the pie crust was flaky... -

It is indeed a neurotoxin. It caused anxiety, depression, and ataxia in me and I had difficulty comprehending (I had to read sentences over and over to understand them--and I used to read 3 books at a time);I could no longer multi-task. Nicole, you absolutely have to tell the cruise company IN ADVANCE that you require gluten-free meals. You can't risk dosing yourself with gluten anymore. They will take care of you! You have an autoimmune disease. They will accommodate you. The people on here have been on cruises and they did fine with it. And just having gluten-free noodles... -
Thanks, Korwyn. I am a warrior princess. I fought hard to get well after being ill for so long and I refuse to let myself become paranoid about eating out in the world. I made the restaurant aware of what happened and next time, no dessert for me. Just stinks because I am still feeling the effects a week later and my Christmas tree is sitting here...

I was afraid of that, but please, please understand that you can be gluten intolerant and still have all these awful symptoms. My Mom does not have celiac, but she has the gene and multiple symptoms. You can swap the flour out by: Substituting an all-purpose gluten-free flour in place of all-purpose regular flour at a ratio of 1:1. Well, of course, I agree... homemade is best--for ANY food, don't you think? Unfortunately, some people may not have the time/energy/money/physical capability or cooking equipment to make homemade pasta--and we're just suggesting a few alternative ready-made options that may be helpful.
