  1. You got it. I got my box of RK and a bag of Jet-Puffed marshmallows over the weekend... The gluten-free Rice Krispies are brown rice, interestingly enough. I haven't tried 'em yet.
  2. udi's is in Denver, Rudi's is in Boulder. Interesting!
  3. I found this over on cafepress: Open Original Shared Link While I'm probably not going to wear that, I might by this mug that says "Gluten is the enemy": Open Original Shared Link
  4. I know someone who is attempting to brew a gluten free IPA. He's an experienced brewer, I am looking forward to the results!
  5. I discovered the hard way yesterdar that my bottle of generic Aleve and that my new bottle of generic Zyrtec contain starch...and had a day of bad acid reflux to show for it. Reflux seems to be my reaction to a low level gluten exposure. At some point I get nailed with the fatigue/brain fog/ab cramps/etc stuff. The brand name Zyrtec in the cabinet...
  6. I've been having a lot of gluten anxiety the past few weeks. I successfully went on a short vacation and managed to be almost 100% gluten free but all I though about was eating safely. At work the only time I can relax when eating is if I'm sitting in my office eating something I brought...the lunchroom is a perilous place. Our home isn't gluten-free so...
  7. Here's what I'd like to see...there's lots of cuisines the world over in which wheat, barley, and rye play a minor role if any. I'd love to see a collection of recipes from South America, the South Pacific, India, etc. that are tasty, don't require tons of ingredients (my main grief with Indian cooking), and not too hard to make. a bit of googling...
  8. Two big positives for me. One is the weight I've struggled against for years is slipping away. Down another pound this morning! 2nd: when he was 38 my father became a Type I diabetic out of the blue. My gastro thinks it was quite probable that he had an undiagnosed case of celiac...so now with my diagnosis I feel like the fear of Type I that I've had for...
  9. that makes it really hard to figure out exposure!!
  10. Hey, I think that's probably what got me with gluten...our houseguests, who were eating pizza etc on Saturday, were using the stove, fridge, and so on. I did my own cooking and was careful with the colanders, cookware, table, and so on but I bet there was crumbs, flour, or something lurking on the surfaces being touched in the kitchen. damn.
  11. I sit here with severe stomach cramps setting in, burping like crazy, and I've realized I've been super irritable all day. Gluten exposure? again?! It's been just a few days since the bread baking incident! I suppose it's possible, it's been a busy few days with a lot of people in the house. I've been making my own food but who knows. Maybe it's just...
  12. Wow. My co-workers on learning about the celiac diagnosis generally say something like: "wow, that's rough. can you still drink beer?" really, I've fielded the beer question about 8 times. I work with scientists and engineers and anything novel tends to bring out the curiosity It's a small company so I'd rather have most people I am routinely in contact...
  13. Another theory that occurred to me today: this new diagnosis has taken the fun out of eating. Unless it's produce or something I've made or a specifically gluten-free product...well...food is now making me anxious.
  14. I'm not a medical researcher but do work on medical devices sometimes and I know a lot of medical researchers. Researchers are almost always principally motivated by the scientific and medical challenges along with the prospect of doing good in the world. Sure, some might get rich here and there but the vast majority never will. It looks like the Nexvac...
  15. The rest of my family made homemade bread yesterday, a good activity for 2 sick kids on a rainy day. This was the first real episode of baking that's happened since I went on a gluten-free diet a few months ago. When I got home late there was still flour around the stove and on the counter. I made myself a quick gluten-free dinner, and went to work on...
  16. Blunting is more than my biopsy showed. Welcome to the club!
  17. I don't have any idea. I just know that I'm dropping about 2 lbs per week since going gluten-free and am about to need new pants and more holes in my belt. Over the past 10 years or so I've had a terrible time losing weight when really trying at various times - even careful calorie counting, complete with a food scale, a food diary, and lots of exercise...
  18. Hey, join the club! I had a positive biopsy during an EGD for acid reflux, negative bloodwork several months ago. Going gluten-free made a huge improvement in my health (briefly: much better digestion, tons more energy, vastly fewer migraines, lactose tolerance restored, no more joint aches, moodiness/irritability greatly reduced, finally able to get off...
  19. I'm a big fan of safflower oil which is high in monounsaturated fats (like olive oil is). I find it has even less flavor than canola and it handles high temperatures well.
  20. For a long time I've made waffles from a Fine Cooking recipe (link Open Original Shared Link). It's a light and crispy recipe that works well with blueberries or chocolate chips added if you like that. I never have buttermilk on hand, I just use 3/4 cup of milk, minus 1 tbsp, mixed with 1 tbsp of vinegar which you let sit for 5 minutes. I've been making...
  21. Cast iron is awesome and we have both a frying pan and a grill pan. Its ability to hold heat is amazing. If you ever find you've got stubborn stuff stuck in it just heat it up scorching hot, throw in 1/3 cup of water and (while wearing a glove) scrape with a spatula. Nothin' survives that steam treatment. As it cools then just scrub out with some kosher...
  22. I've been using Gaviscon during my weaning off of Prilosec and its associated acid rebound effects. It works really well except for the moments when the tablets are foaming in your mouth. blagh.
  23. I haven't quite ordered them yet, but they're Tovolo brand mixing spoons: stainless steel handles, firm silicone rubber spoon. $8-10 ea, not too bad. Here's the Open Original Shared Link, hopefully this won't be blocked.
  24. I have stainless pots/pans, and our cutting boards are dishwasher safe Open Original Shared Link. If a kitchen can't go in the dishwasher I don't buy it /uploads/emoticons/default_wink.png' alt=';)'> I haven't dared use the wood spoons but I am targeting them for replacement with these. For non-stick cooking I use carbon steel omelette pans and cast...
  25. I sat down for my biopsy results for acid reflux and she pretty much said "no reflux damage you can wean off Prilosec. Now let's talk about celiac..." and then told me about the celiac biopsy results which blindsided me - and had also surprised her. We talked about gluten-free diets and she recommended some books and a local support group. Three weeks...
