I think the obvious answer is that there is far less gluten in oats that may be cc'd as compared to actual wheat. Whatever is in the egg, whether it be at a very low ppm's of gluten threshold or a broken down metabolite that's causing the issue, is not enough to affect me. You haven't been gluten-free that long and so you shouldn't jump to the conclusion that you're sensitive to gluten in eggs. The vast majority of celiacs, even the more sensitive ones, are fine with all eggs. You should try introducing them and just watch closely for any reaction. I read it recently. He packs a lot of information into the book - unfortunately it's hard to distinguish between what's factual (a lot of it is) and what's not quite proven. I think it's an interesting read, but I would take large portions of it with a "grain" of salt.

My endoscopy showed chronic gastritis when I was first diagnosed. I was tested for all the things IrishHeart mentioned - everything was negative. My nutritionist who is expert in Celiac recommended that I avoid TJ's products. There have just been too many issues with cc. I only buy olive oil, salt, paper products, and dish soap from them.
