  1. I buy most of my meats at Meijers. I find no difference between store brands and name brands aside from the price..and I'm very sensitive to any sort of additives.
  2. Gallbladder dyskenesia and pancreatic insufficiency can be caused by Celiac disease damage in the duodenum. A hormone (CCK) is produced there and is sent to the gallbladder and pancreas telling them to squeeze out the bile and digestive enzymes needed to break down and digest foods/fats.   4. Well..I guess technically potatoes won't kill somebody..but I don't want to eat things that I know are going to make it almost impossible to do things like..open jars, or walk up stairs. It seems to me, if something is causing that much inflamation it's something we ought to skip? I like potatoes..and occasional potoato chips..but I can live without them...
  5. Thanks so much for your input! There's no Dr. that I know of that will ever admit that we can have these sort of sensitivities, much less help sort them out. I tried low sals when I first heard about them almost a year ago. I slowly added things back and nothing seemed to bother me until the potatoes just recently..whammo! My first thought was nightshades...
  6. I'm so glad I whined here a bit..and that you posted about the sals Bartful. I've lost strawberries recently, and the stew I made had potatoes, carrots, and bay leaf..all high sals. Blueberries bothered me in salad with olive oil..also high sals. I've been eating peaches and broccoli quite a bit and use coconut on my veggies in lieu of butter...all high...
  7. Now that you mention it...bluebarries bothered me the other day. I had them in a salad with dressing made from lime juice, sugar, and olive oil. I'm going to have to watch the sals. When I had my first endoscope the damage was pretty obvious. The lab doing the biopsy report questioned if I was using Nsaids..which I never use. It made me question sals...
  8. I really wanted to keep potatoes! LOL I tried Idaho vs red potatoes well peeled and they're still a no-go. Sweet potatoes technically aren't a potato so I hope you can keep those? Finges crossed for you!

  10. I've been having odd symptoms. My severe insomnia came back..and my joints hurt..a lot! Whatever was "getting me" was getting worse. I keep a food log, so I went back and looked at what I've eaten and symptoms. The evening I had fried potatoes, then veggie chips made from potato starch the knuckles in my hands hurt so bad I couldn't bear to move them...
  11. I read the book and it sure made lots of sense. Wheat consumption has increased in our diets, and with it came obesity, Arthritis, thyroid diseases, high blood pressure, and diabetes along with a host of other illnesses. I don't think wheat is really good for anyone? Even those around me who aren't DXed as Celiac seem to suffer an awful lot of symptoms...
  12. Thanks so much for sharing your cooking method. I probably wouldn't have thought to use the cast iron and it sounds like it worked well? I haven't tried the Chebe mix, but I see my grocery store carries it. I'm real tempted to run out and get some to go with the pot of beef stew I'm making for supper.   13. If you have damage to the tips of your villi you may not be making the enzyme that breaks down lactose? It's best if we go dairy free at first. Your intolerances will be unique to you, but often times soy, dairy, and corn seem to pop up as main offenders.   15. I'm so glad you're feeling better. Being dehydrated makes a lot of your organs work harder..even your brain doesn't like it. I'm surprised they let you go if they gave you 4 bags of IV solution and you were still dehydrated, but I'm sure they thought that was enough? So many of us have been through procedures and tests, but not the right ones. I hope...

  18. Bloating usually means the food hasn't digested very well and is sitting there sort of fermenting (causing gas). The fat content in a hot dog can do that. Have you tried taking digestive enzymes when you eat? If you're still bloated you could try a bit of baking soda in a glass of water? I can't walk through the bakery section of the grocery store...
