  2. It's also possible that it's a reaction to something else. Anything from your bath soap / shampoo or conditioner to something you ate, or additives in something you ate. I'd suspect there would be more than 1 symptom if it were celiac. You might want to look at anything new in your environment or something you ate up to 24-48 hours before the burning sensation...
  3. Indeed, it's pretty awesome. I think I said thanks 2 or 3 times. My brother makes snide remarks now & then (like 'pretty soon you'll only be able to eat tree bark!'), so it's great his wife is good about it, since she's doing most of the cooking!

  5. I don't know if this will be helpful, but I saw a recipe for Open Original Shared Link on julesglutenfree blog (linked). It asks for a loaf of gluten-free bread, 3-5 days old or stale / thawed from frozen. I haven't tried Udi's bread nor have I made a french toast casserole. :-) Hopefully someone else will come by that can answer your specific questions!

  8. I would think you don't need xanthan gum or other dough conditioner for a streusel topping, but it probably wouldn't hurt to use it if you have plenty of it. I have a recipe that has identical proportions to the one that was linked, except it also has 1/2 cup walnuts too.

I'm not an expert, however if some of that brand specifically say 'gluten free' and others have no apparent gluten ingredients but do mention other allergens, I'd go with the ones that are labeled gluten-free and leave the others alone. At least until I had more experience or could research it. It's possible there are some spices, or similar flavorings that...

  11. I have a supplement that has maltodextrin in it that gives me brain fog. I know it's supposed to be gluten-free when it's in food, but I'm not sure that applies to supplements. (This one in particular doesn't say it's gluten-free). And even if it's a gluten-free supplement (with or without maltodextrin) it's possible something else in it bothers your system...

The way they test for it is to take a small biopsy sample from a clear piece of skin adjacent to a break-out or blister.   13. Does xanthan gum count? Pamela's cookies don't have corn or soy, at least the mini ginger snap ones I have. I love those... they do have xanthan gum though. And to answer the original question - the biggest downside for me right now is I'm still trying to figure out what's safe for me to eat. I've finally decided I probably have to give up coffee, too...

  15. I think at least one of the reasons they say that eating 'too much' meat is bad is because of the Ph balance. One thing I found when I was researching was the whole Ph issue, and too much meat can cause an imbalance, (i.e. becoming too acidic) and that's where it would impact the kidneys I think.   17. If you were diagnosed with blood test and biopsy, that would mean the biopsy shows intestinal damage. That means even a crumb out of a jar of mayonaise (or peanut butter or whatever...) would be enough to make your body have a reaction, causing damage, even if you don't notice it. If there is any liquid, what I try to do with rice flour is mix in the liquid, or mix everything together (including liquid) and let it sit for at least 10 or maybe 15 minutes or so, before I bake it.   20. Another thing that helped me on the back of my knees, was a lotion with tea tree oil in it. Specifically by Nature's Gate. I got it at super supplements. It relieved the itching and dryness long enough for me to sleep at night, though of course it has a bit of the tea tree odor so I didn't wear it during the day.   22. I wanted to come back and update this thread, to pass on some information. I mentioned above that I was taking Twinlab Norwegian cod liver oil w/ mint flavor. Just because I wanted to be completely sure, I emailed them to make sure there weren't any gluten-y sources for the flavor. I just received a reply email, which says: Just so y'all know.
