  1. I've had worse headaches in the past couple of weeks than I have had in awhile, and I think I've finally figured out why. Tyramine. As a kid, (and I don't think I was a celiac as a kid), I would often get headaches, and it didn't take me too long to figure out that cured meats would give them to me sometimes, and then eating too much aged cheddar and...
  2. Right, so, like, everything has corn. I find huge lists of corn derived ingredients. But I only want to avoid zein, at least for now. I'm having a really hard time, (impossible time really) separating corn ingredients from zein ingredients. For instance, I've read that cellulose and microcrystalline cellulose contain corn. But when I read things like this...
  3. Umm, as has been said, I thought citric acid is naturally found in, well, all fruits and probably most vegetables? Do you have a problem with fruits? Is it worse with citrus fruit? ALTHOUGH, from what I've read, most citrus fruit is waxed with a wax that is likely corn derived, so that's also hard to tell...it's never easy is it :-( If you think you have...
  4. There's clear potential for getting gluten from that. I haven't tried asking this with a restaurant yet, but at my mother-in-laws, she grills everything in aluminum foil for me.
  5. I'm sorta in the same situation as you kam43, trying to figure out how to get better. Been gluten-free and dairy free 2 months now. No apparent screw ups with gluten, one mess up with dairy. Things that are better: Little/no bloating, near constant pain that was on lmy eft abdomen is now rare and very mild. Things that aren't better: Mental aspects...
  6. Pretending I didn't know about celiac disease, or before I heard/knew about it really, I'll try to answer as best I can. I'd believe you had fatigue all weekend, I'd be highly dubious as to the cause. I'd think that something else made you tired in conjuction with you thinking you'd be tired. Swollen, I would've been dubious, dizzy, would...
  7. I thought that if you cooked on planks you used them once, or for one meal, and then tossed them. Not that I cook on cedar planks, but you buy in them in packages from the store for home use, for pretty cheap. I could totally see restaurants having their own large, restaurant plank or something though. Have you worked in a kitchen where wood planks are...
  8. Hang in there, I know you can! Don't let people, especially doctors, get to you! No one really knows how badly you feel except for you, so next time a doctor tells you 'you're fine', insist that they just keep looking for other reasons why you're not fine. Your family loves and cares for you, even if they don't understand. It's unfortunately perfectly normal...
  9. The only abdominal pain I've ever had is very specific on my left side only. I diagnosed with IBS because of it. Mine wasn't always in the same place, but tended to stay upper left. When I got a colonoscopy I remember it hurt quite a bit, the same feeling, on the left. It has gotten much, much better since January. I was gluten-free for 2-3 months...
  10. I know this is old, but you didn't get a lot of answers. I wouldn't call my own experience extreme thirst, but since I went gluten free I noticed that dairy makes my mouth very dry-feeling, (while not actually being dry because I feel my salivary glands are working just fine), especially my tongue, even in small amounts. It can make me want to drink...
  11. For what it's worth, most food intolerances are *only* diagnosed by 'Not eating it, I feel better, and when I try it again, I feel worse'. There just don't exist accurate enough tests to say otherwise. And I say this now because celiacs often have other food intolerances which we only figure out once we've been gluten free. It's very frustrating not knowing...
  12. I couldn't help but check your age. It might be menopause. I'm no expert on menopause at all (I'm too young, although I swear I would get hot flashes, along with cold flashes, when I was eating gluten and dairy), but I do know that hormonal changes can cause all sorts of stuff to happen. Now I suspect that I've been a celiac for around 12 years, but about...
  13. As already said, yes, there's a chance your biopsy will come back negative. As far as false positives go, when my GI recommended that I get a biopsy done, I prompted him mulitple times why my blood test would come back positive if I didn't have the disease, to which the only answer I got was 'I'm 90% sure you have celiac disease'. So he didn't answer the...
  14. If you can tolerate any beverages you could order one at the restaurant. Many will come in individual cartons or cans, you could ask for that to worry less about CC. I second the corn theory too.
  15. I would still call the hall and tell them to not prepare a plate for you, although I suppose if someone else at your table will want to eat it, then that's not a big deal. I actually just went to a wedding reception myself, and I did eat the food there. I hadn't thought about checking when I accepted the invitation, (I dunno where my head was at), and...
  16. So I think I may have an issue with corn. And after finding out that there's a potential IgA response to it, especially in those who have been undiagnosed celiacs for awhile, it makes me want to try going corn free. But going corn free is SO HARD!!! Everything, apparently, has corn in it. Things I'm most concerned about having corn: wax on fruits and...
  17. This isn't about learning per se, but there's a number of studies that crop up in google scholar with celiac disease and schizophrenia. I'd call schizophrenia a cognitive problem. PErsonally, I got badly depressed before I started university and remained that way throughout my schooling. Looking back I figure I probably developed celiac disease a bit before...
  18. Thought I should post because I remembered stuff I had forgotten. Waking up this morning, I haven't found anything new but experienced a different type of sensation that I suspect is linked to B vitamin problems causing nerve damage due to the nature of the pain. It's a variably pulsating pain, not with my pulse but less often and more random, and it...
  19. On the topic of tea, how do you clean your teapot? I've got a standard glass teapot, but cleaning the spout seems pretty impossible to do. What's more, if I did manage to clean it all properly, I'm not sure I could tell because I can't really see inside it! Guess I'm looking for a chemical reaction or something to clean it. Did you buy yourselves new...
  20. I think burning stuff in the oven would work well. If it's charcoal it won't be gluten anymore, plus that's an easy way to clean the oven anyways. ... I haven't clean my own oven since being dxed...done almost everything else. Washed the oven mitts and towels but not the oven racks or the inside of the rest of the oven.
  21. I try to eat only local organic meat for personal ethical reasons. That said, I'm sure it has a lot of salt in it, and the sandwich meat I eat I could easily see having MSG, although I would doubt the sausages do. I do like my sausages and sandwich meat. The sandwich meat is just such a nice, fast, easy, grain free, sugar free snack :-( The tortillas were...
  22. I stopped eating corn a couple days ago in hopes of this getting better, since I often don't feel too well after I eat nachos or popcorn or tortillas. But that could also be a salt issue. It's too soon to tell yet if that's helping me or not, since it varies so much regardless. But I'm going to stick corn free for awhile now. If eating less protein does...
  23. Old post, but this is one of my current concerns too. I've had tingling and swelling in my hands and feet for a few years now, and it's worse in the morning often, but it still stays all day long. I'm going to call my doctor today to try and get to the bottom of it. I'm still worried about my kidneys, even moreso when I read about eating less salt and...
  24. There's a whole other thread not more than a month old about Kraft representatives not saying the same thing their website has. I shouldn't have posted that link there, not here, because that's not what I initially concerned me about Kraft. If they are worried about being sued, then I should be worried about ingesting their products. Laws and regulations...
  25. Right, so if a label they have has an ingredient that has gluten or 'may contain gluten', I will not buy it. And I will get a new list from them every so often. It's a pain, but there's assurance there. Obviously over time a product can change. This is true for everything ever. I know what you're getting at, and there is a world of difference in telling...
