  3. Both my sister and I were tested (gene) through enterolab this summer (2 years after my diagnosis through bloodwork). We both have the same Celiac gene (DQ8) and gluten sensitivity gene. The next step is to test my parents to see if one of them has both the celiac/gluten sensitive or if one has one/one has the other. I believe one of CarlaB's daughters...

I have no idea if my food issues are allergies or intolerances, so that was my concern about the testing. i never bothered with the testing (besides the obvious Celiac 2 years ago), because I had heard about how the tests can be unreliable. Since I am pretty "in tune" with what was going on and knew/learned a lot about food, I just did the elimination method...

  8. to add to the dairy conversation, a couple things: you might be what they refer to as "temporarily" lactose intolerant. Many new celiacs do not react well to lactose at first because of the damage in their intestines.   9. Actually, Nisla, you have to go on my list for a BIG gold star. When I was still eating "other" foods, your cheese/pizza stick idea was a LIFESAVER. That was one of my favorite gluten free treats. Just the idea that I could really make anything was such a help to me.

  13. mine is pretty simple and can be modified for whatever type of bread (white bread or corn bread) you like. Make a loaf of bread that you want to use (I did corn bread last year and it was heavenly). Bake it, let it cool. Slice it. Then cube it. Lay it out on a sheet to dry up.
