floridanative-i use the progresso creamy mushroom soup for casseroles. I heat it on the stove, and add some gluten-free flour mix to thicken it. My mom made the green bean casserole with it and everyone loved it....she actually thought it was better and is going to make it that way from now on!!! It works wonderfully for casseroles! -

While I completely understand your position on drugs, I still think it is exciting that this drug might change how other autoimmune disorders are treated (i.e., the ones that can't be controlled by diet)!!!!!!! I think it is still important to conduct research and have break-throughs in medical technology. -

Bev, I hope you are doing better. I know it is frustrating!!!!!!! I always talk to managers, etc., and have been sick at just about every "gluten free" restaurant there is, from fast food to upscale. I know from other posts you are super sensitive to very small amounts and I think I'm in the same boat. I hope you begin to feel better soon!!!!!!!!!!!

hey tarnalberry, Yes, that is what I took from it, and from the pictures that were presented. (that the reaction occurs once the gluten has breeched barrier cells, through the tight junction). Now, I don't understand it fully, but that is the basis that the zonulin research is going on. But, yes, I do believe it is the 33-mer that triggers the reaction... -

Ditto about the research, Bev and Vincent. I told Dr. Paterson how he gave me a lot of hope --- not only for myself/Celiacs, but for others. They are taking a huge risk (in terms of money) and medical advancements aren't made without risks. He really inspired me!!!!!!!!! I wish I had a video of the talk for everyone to see!!! Dessa, I think that there are various theories out there right now about what causes Celiac, hence, the various angles that research is taking. I believe there is research looking at the enzymes as well. "Stopping the permeability of the intestinal wall is not going to stop the celiac reaction." Chrissy--From what he spoke about at the meeting, this drug is designed for diagnosed Celiacs (i.e., not gluten intolerant, gluten sensitive, only Celiacs). He did not address the role of of this drug in people who might be at a higher risk (those with the gene, family history, etc.) I also do not know if this exact pill will work for other auto-immune disorders... -

I heard Dr. Paterson, the CEO of Alba Therapeutics, speak at a GIG group this past week. In terms of side effects---he said that study participants experienced little to no side effects. He said participants who had the placebo actually had a higher rate of side effects. In terms of the leaky guy, etc.....it was fascinating to hear him talk about it... -

maltodextrin is safe.... just looks deceiving also---not ALL soy sauces are gluten filled. There are some that are safe. However, the majority of processed foods with soy sauce in them have gluten (from my own label reading). -

I actually had better results with my regular oven than my bread machine. I use the Bob's Red Mill gluten-free bread mix.....I use an extra packet of yeast and make it in two loaves instead of one, but its the only one that I'll eat (my mom made a whole bunch to get it just right!) I like to make little grilled cheese sandwiches with it and pretend I'm normal -

you will have many, many alternatives if you are found to have Celiac Disease (which is an autoimmune disorder-not an allergy). There are lots of rice flours, potato flours, bean flours that you can use separately or mixed together. Luckily, many of the manufacturers recognize that people with one intolderance have others. My body went through a roller coaster of symptoms, both before and after I was diagnosed. I later realized that after I went gluten-free and was still feeling weird that it was just my body healing.....had to get all the gluten out, then had to repair itself, etc. It can take weeks/months to feel somewhat normal! congrats on 4 days! the beginning can... -
certain lunchmeats (like roast beef) condiments (butter, mayo) in my fridge that were used with gluten foods (we now have separates) my main one is not a label----but cross contamination through eating out. I have less than a handful of places that I can eat at anymore, I am so sensitive. good luck!!!!
