  3. Is she being monitored? Mine started going up (in the hundreds)... Then reached two hundred, then sky-rocketed to about 800. I had a liver biopsy done to ensure that I didn't have anything else. Is she taking any supplements? Or medications? When the enzymes are elevated, they might increase it. And some naturally cause it.

On the dieticians of Canada site, you can search for them in your area, and there is an option to search for ones knowledgable about celiac. Whether they really are that savvy is a gamble, though...
  6. The egg replacer was incorrect. However, I also think that the flax method isn't the best for cookies. 1 egg is 1 tbsp ground flaxseed plus 3 tbsp warm water. So, you would have needed 1 1/2 tbsp. flax + 4 1/2 tbsp. water... Hope that would help. I don't think the butter sub would have made a difference in this one. If they aren't tasty, use...

  19. Hi Jeri, Since it seems as though you aren't getting glutened, I would either assume that it might be from a food intolerance, or something completely unrelated. I opt more for the latter. I have found (I do this myself, but a lot of people tend to) assume that is more is caused by the disease than really is. I'd go talk to your doctor about it. Hope things...
  20. You can use candies to decorate, esp. if they don't have any other intolerances (soy, dairy, corn, et cetera). Skittles are gluten-free and casein free. M&Ms are gluten-free. If you are making brownies, you can melt chocolate bars as a topping. And you're really, really nice.

  23. i just wanted to add that goat cheese has casein, too. i forgot about that - i have to strictly stay away from all casein. i hope your figure out what's bothering your belly. i make homemade cheese substitutes (even the non-dairy cheeses (the ones that are casein free, too) have fillers and rice (i'm allergic to rice) and i can't have them. perhaps...
  24. I know that Lespedeza Capitata is from the pea family, and the other is a weed - but I have no idea about potential gluten. Hope that helps a bit.
