  1. like molly said, i wouldn't rule out gluten either. if i get a slight cross contamination, i don't have really bad stools, but i get brutal brain fog, nausea, and other stuff. if i eat something CLEARLY with gluten, i get the fatty D for about two weeks. it does vary per person.

  3. some foods have sulphites naturally, like grapes (and therefore wine, et cetera). it's used in a preservative in a lot of products, esp. dried fruits / dried herbs (like onion flakes). if it's just the fruit salad, i doubt it's the sulphites.

  5. beerlow, a lot of the celiac canada information is slightly outdated (it doesn't mean it is inaccurate). where do you do your mainstream grocery shopping? if it is a part of the loblaw's corporation (IE zehrs, loblaws, superstore, they have a natural food section.

  11. you might be sensitive to legumes, in that case, chickpeas and soybeans are both from that family.
  12. you can sub in soy flour for flour in any recipe. i generally do a ratio of soy, amaranth, tapioca and potato starch.

  14. I am not positive what you mean... Something can be lactose free but not casein free. Is that what you are indicating? I am casein free, too.

  18. well, if soy is bad for celiacs, i'm screwed! it's my main protein! silk, yes, casein free. natura brand soymilk is nice, too (also casein free), and almond breeze (also casein free). those three are household staples.
  19. is it possible that you are either getting a bit of gluten in your diet (i get horribly dehydrated when i do), or that your mineral water has sodium? i drink copious amounts of water, anyway, but just to make sure.

  23. A few months ago, my liver enzymes were all over 800 (and as you know, under 40 is normal). Gluten was sneaking into my diet (I thought I was gluten free). They tested me for everything. They teetered off around 150, but haven't budged, so I am getting a liver biopsy in two weeks. Perhaps that would help.
  24. cassidy, i understand what you mean. some celiacs make me feel like i 'overdo it'. but i just don't like leaving room for error! i found the information at my meeting great, but i'd say that 95% of the folks there were three times my age - i was hoping to meet people at least within ten years! when i went to the first one, i sort of just sat at the back...
