ARCHIVED I Did It... I Made Bread!
2Boys4Me replied to jkmunchkin's topic in Gluten-Free Recipes & Cooking Tips
My Incredible Edible Gluten Free Food for Kids cookbook says that cornstarch can be substituted with potato starch or arrowroot starch. Potato starch can be replaced with cornstarch (or rice flour but will result in a denser product). My question is this: It says 3/4 tsp then 2 tbsp salt. I wonder if the 2 tbsp is actually sugar? Thanks for the recipe... -
ARCHIVED How Long Before My 5yo Starts Gaining Weight?
2Boys4Me replied to mamatide's topic in Parents, Friends and Loved Ones of Celiacs
My son started the gluten-free diet about 2 1/2 months before his sixth birthday. He's been on the diet for 9 months and he's gained about 5 lbs. He had never made the miraculous weight gain and shooting up in height that I hear about. He seems to be (when his brother's not around) a happier child. He started grade one at 33lbs. In Canada, kids are required... -

ARCHIVED How To Handle Snacks Handed Out After Baseball Games
2Boys4Me replied to johalex's topic in Parents, Friends and Loved Ones of Celiacs
My husband is coach for my 6 year old son's soccer team. Following is part of a letter the my husband sent to the parents of the players: We will each be responsible for providing a snack for the team, on a rotating basis. We do have some allergy concerns this year. One child is allergic to nuts, and another has celiac disease, which means he... -

ARCHIVED For Those Who Need Food Ideas For Long Road Trips
2Boys4Me replied to Carriefaith's topic in Traveling with Celiac Disease
Thanks Carrie. I may be trapping myself in a van for two days with two kids and was trying to figure out how to do it. I think I'll have to pack a suitcase of food anyway, I'm not sure what's available where we're going...if we go. -
ARCHIVED Grocery Stores Or Health Food Stores In Calgary
2Boys4Me replied to Carriefaith's topic in Introduce Yourself / Share Stuff
Hi Carrie, It's called Amaranth Whole Foods Market #7 Arbour Lake Drive NW You have to get yourself on either John Laurie Blvd. westbound or maybe Nosehill Drive, depends on where you're coming from. I'll give you directions from John Laurie Blvd. You'll drive westbound and when you get to an area called Crowfoot there's a YMCA on the NW corner, a... -
ARCHIVED Tinkyada Pasta
2Boys4Me replied to skipper30's topic in Parents, Friends and Loved Ones of Celiacs
Ty is the only gluten-free pasta eater at our house. He likes the Tinkyada "Little Dreams". Probably because he can spend the meal counting shooting stars, airplanes, rabbits, etc. and we have plain old noodles or spirals. No Wacky Mac anymore. -
ARCHIVED Old El Paso
2Boys4Me replied to francelajoie's topic in Gluten-Free Foods, Products, Shopping & Medications
He's good. We're still finishing our giant bag of food, and he still gets milk bones (made by Kraft so they clearly indicate wheat) but he hasn't vomited in a while. He's good for a while and then he'll vomit or hack for 3 days and then doesn't happen again for a couple of months. He has seizures once in a while, too, but his blood work came back negative... -

Karen, check the ingredients on the kit. It divides up the lists and the dinner kit says: Taco Seasoning Mix: blah blah blah, wheat flour, blah blah blah...it's the fourth last ingredient. Taco shell: corn flour, water, whatever. Salsa: Tomatoes, whatever, more stuff, etc. This is for the item that comes up on the link provided that says Taco Kit. I know... -
ARCHIVED Old El Paso
2Boys4Me replied to francelajoie's topic in Gluten-Free Foods, Products, Shopping & Medications
On the ingredient list of the Taco Kit (doesn't say soft or hard) on the seasoning mix 4th ingredient from last is the wheat flour that Francelajoie mentioned. On the link anyway. -
Someone made a good point earlier about when you were supposed to be born. Example, my husband had been due middle of May, but showed up late March. I was supposed to be born in August, but was born in July. Both my kids are Scorpios, but one October (9 days late) and one November (5 days early). None of the diseases/conditions match anyone in my family...

I use the individual packet all the time. On your link, 4th ingredient from the end is wheat flour. The kit seasoning has 800 more ingredients that the individual packets (or so it seems). -
Okay, I just thought this is something he wants YOU to do, not him, and if he doesn't do the diet, he wouldn't understand how difficult it could be. I don't know much about the diet, but in the beginning, I guess it's pretty limiting. I second Vincent's thoughts on trying gluten-free/DF for a while, and if that doesn't help you (and you should probably...

This might be slightly off topic, but is your husband doing the SCD diet with you?

ARCHIVED Baking Questions
2Boys4Me replied to momothree's topic in Gluten-Free Recipes & Cooking Tips
My son just takes the banana bread for his lunch (and some side dishes). When I was growing up, we put icing on it and called it banana cake, so it was a bit horrifying to me to send "cake" every day for lunch. Then I decided, that he loves it, it's pretty easy to make, so I'll put butter on it and call it "bread". I have not tried to modify it at all, except... -
Aha! Thanks, I always call in regards to "natural flavours" but I wasn't sure if that's what Richard meant. We don't have the same FALCPA (?) laws as you do up in here in the Great Sunny North. (It's not white right now) I thought the whole point of the new labelling law was for the "may contain" line, or is it that all top 8 allergens are labelled using...

ARCHIVED Still Trying To Figure This Stuff Out
2Boys4Me replied to skipper30's topic in Parents, Friends and Loved Ones of Celiacs
One of the parents has to have the GENE, but not necessarily the DISEASE. My younger son has Celiac but my husband, older son, my Mom and I have all tested (blood work only) negative. We have not had gene tests, but I am sure from signing up as a bone marrow donor one time that I have HLA B8 which is one of the genes associated somehow with Celiac. -

ARCHIVED How Do I Explain Celiac To Others?
2Boys4Me replied to misgiss's topic in Parents, Friends and Loved Ones of Celiacs
We say to please not feed Ty unless they check with us or have Ty or Walker (big brother) read the label first. My kids are 6 and 8 and they know the "friendly" companies and for the most part what Ty is/isn't allowed to eat. If he doesn't know, he doesn't take it and walks away. He's been gluten-free for 8 months and always asks if something is gluten-free... -
ARCHIVED Advice Re: Biopsy, Please!
2Boys4Me replied to ashmom2's topic in Parents, Friends and Loved Ones of Celiacs
Well, I can't help much because before my son's biopsy we were told by no less than three people NOT to change his diet. As far as prepping for the biopsy, he knew he'd go in with a nurse, they'd put a mask on his face, he'd have enough time to say "You don't know the power of the Dark Side" and then he'd fall asleep. We said that probably when he woke up... -
