I think it depends on how sensitive the NCGS person is. I think there are a few here that are pretty sensitive. -

I do know if your not eating Gluten your Celiac test will be negative. I have a friend that is anemic and it has nothing to do with being Celiac or intolerant. That can be an issue all on it's own. -

I also was having symptoms when eating gluten-free processed products , come to find out I am intolerant of corn. They replace alot of Gluten with corn. You may be intolerant also. -

A few months back I had a drink of vodka and water , I felt I was Glutened, I can now have a vodka and water that is Grain, corn, potato what ever ,it doesn't bother me. I think my gut was not healed enuf. I don't drink too often but sometimes it's nice to have a lil drinkypoo and not feel like I am Glutened. -
I have found a couple of restaurants I feel safe in , I know! I am lucky in that respect! I am also lucky I have friends who support me! They are always inviting us over, letting me know what they are making and ask me if I can eat it. I usually say you make what ever you want I will bring something. They are ok with that! I say that because It said ingredients : Tuna , soy salt. But it wasn't juicy and didn't need water or anything squeezed out of it.

You are so right! I think I have a problem with Soy! I noticed another time I ate something started having a problem look at the ing. and it had soy. I automatically thought "it doesn't have Gluten" so I kinda dismissed it. It feels as tho I have been glutened. But Soy is bothering me.

I would look into other food allergies, also your condiments ,spices, other stuff your cooking utensils , Cutting boards?? Maby Lactose , or Corn intolerance ? ? Just simple suggestions -
Yea um I was a tinge glutened! I ate some Tuna and when I ate it! I looked because then my gut! Then the puke! Then I looked and yea it had soy! In it! OMG really? When you say "Haven't been eating much gluten gluten in the past year" could be the problem sweetie. You need to tighten up your diet! You need to remember Gluten Free is "Gluten Free" Not a haven't eaten much gluten.. If you have Celiac You need to be Gluten Free!! All the way!! Not Gluten light! -

I think some of those also! Sometimes I just want to reach into that cracker box and eat one! It is a ride but it gets easier as time goes on! So very sorry your going thru so much! It is tiring just to have that much stress of your everyday life let alone your diet. Prayers sent your way sweetie!

Yes I realize they can still accommodate even tho they don't have a menu. But I think in that restaurant they need to be educated! It was in Grand Rapids Mi. Andon line they advertise a great gluten-free menu. But saying not for lunch? I figured must be a different cook! Yea it did have a lil moisture but It's the best I have tried as of yet! I think you can leave the cheese out really! And just do the Cali and eggs if your Lactose intolerant. I bought some weird cheese that didn't have lactose! But the darn pepperoni did have some corn in it! Didn't affect me too bad! It's been the best since I have started this crazy Gluten... -

I have ADD lol I cannot concentrate unless I am super interested! My hubbs has a habit of telling long drawn out stories and then the voice of charlie Browns teacher starts to jump in. I have to force my self to stop and listen. I hope I never get Glutened to find out if it will be worse! Good luck with your race! feel better! -
