Guhila--My husband and I love to drive to the Lancaster area to shop and take in the beautiful countryside--Lititz is one of our favorites, though! What a lovely town you live in--all of the stone houses and little shops. -

Tinkerbell--If you feel that you want further testing sometime in the future to monitor your healing progress, you could find another GI that already treats Celiacs. Rache--I just want to say that I hope you get some relief from all of this soon. I can remember when my boys were very young and it was all I could do to take care of them. When they napped, I rested. I know that's no way for a young person to live--I understand and I will keep a good thought for you -
I hate to make generalizations about this because I know that there are knowledgeable dietitians out there--but from what I read here, they can be few and far between. I considered going early on, but honestly, I have gotten all of the practical advice I need here.

Starches cause me to gain weight, too. Those and sugar. I have found that fat is not what makes me gain, if I stay with fruit, veggies, meat, nuts , those kinds of things, I don't have to worry about the olive oil, nuts or anything. Hi Mary--It is my understanding that healing can take from 6 months to 2 years or more, depending on factors such as amount of damage, length of time sick, individual healing rates, etc. I am 9 months into the diet, and I still have fatigue as a symptom. I avoid them because I am intolerant to a lot of the ingredients they contain like rice and soy. I do like the Enjoy Life cookies--the Snickerdoodles and the Gingerbread Spice. Those have sorghum flour. Also good are Lara Bars. I wish I could use more packaged foods -

My aunt taught me how to make it many years ago. It's actually not hard at all once you get the hang of it. I do remember that it's important to mix the eggs in well and one at a time. I would think that would be true with a gluten-free version, too. -

I agree with Richard--always best to read the whole label. On a related note, I bought a box of My T Fine butterscotch pudding last weekend. It had 'modified food starch' listed in the ingredients. No allergens listed--an older box, I'm sure. Anyway, I called and the butterscotch flavor is NOT gluten-free. So, even with the new law, I think it's wise... -

Ha--one day back and you tell me something I didn't know!!! We have a Charlie Brown's Steak House near us. We used to love to eat there--so glad to hear they have a gluten-free menu and they're well versed on the cooking. I agree--Whoever taught the class had the facts wrong. The only possible concern would be with the alcohol. I always use McCormick Pure Vanilla Extract. -

Me too! Although I've only been gluten-free for 9 months. I did not get sick with a cold or virus at all this winter--even when someone else in the house had one. This was also the first Christmas season that I didn't get sick--I would always manage to catch something then. I'm not doing anything special--just eating gluten-free and taking a multivitamin... -
