  1. Well, I tell ya--I appreciate you taking the time to take notes and posting for us. I would love to have been there. It is exciting to think of what might come out of all this.
  2. Wow--thanks Laura--this is all so interesting
  3. This is what I was thinking when I said it looks harder than it really is. I wasn't being flip, but the at-home cooking aspect of it is just not any harder for me than before. I always cooked meals from scratch before, and I still do, just tweaking ingred. when necessary. I will say that I just don't go out to eat now--that is hard because we almost always...
  4. My feeling on this is that if you find that your reactions tend to result from restaurant eating, then it could very well be CC happening in the kitchen. I don't eat out at all now--and it was something we did every weekend--because I just don't know what is happening in the kitchen. No matter how clear we are with our special instructions, etc., we're...
  5. You're Dani's stepmon? Danikali? I didn't know that. Dani is so sweet--we've been trading notes lately on our rice problems! I agree that if you feel better gluten-free, then that is the way to go. None of the Celiac tests are perfect, and as a person who was sick for 20 years before being diagnosed, I do believe that this leaves us open to autoimmune...
  6. Don't ya just love products that are labeled like that?
  7. Yea Vincent, if it didn't say what kind of starch they used, it is probably corn. I think you'll be fine--now don't worry yourself sick
  8. This is just my basic mashed potato recipe--I do use Smart Balance--I am sensitive to soy and dairy, but can use Smart Balance without problems. Peel and cut potatoes into chunks, boil in salted water until very soft. Drain cooking water into glass measuring cup. Mash potatoes with hand mixer, adding cooking water and Smart Balance to get to the consistancy...
  9. Thanks--I had wondered if they were safe. They look good
  10. If he has not been eating a lot of snack foods, I would just try a few to start with.
  11. I know Jen, I was very inpressed!
  12. It's good that you got someone on the phone who at least listened and will look into it. Feel better fast so you can enjoy at least part of your time off
  13. I'm off grains now, but I always had good luck with using rice flour, too. I would take a cup of the rice flour, take out about 2 tbsp. of the flour, and replace with potato starch. Add 1 tsp. xanthan gum, and that was it.
  14. Ha--I know too well! I haven't actually eaten out since September--just too scared of getting sick
  15. Hi--Sorry you daughter is having such a hard time. When I have a gluten reaction, I will have D from about 2 hours after I ingest the gluten (always thru CC, never on purpose) to about 3-5 days later. During that time, I also have nausea and lightheadness. I would only actually be "down" for those 3-5 days, although I don't feel normal for 2 weeks. I...
  16. You know, Mally's Mama, you make a good point. My husband has gotten D from restaurant meals lot of times over the years. Not food poisoning or anything (except once a couple months ago) but just something not sitting right. Could be almost anything--
  17. Hi--I agree with Nini--having the testing is unnecessary. The thing that should concern you now is being 100% gluten-free. You can't do anything about what has happened in the past few years--but you can begin to heal any damage done--starting today . We are all here to offer support and tips on how to live gluten-free. You can do this
  18. That is impressive, Nancy--he sounds like a 'keeper'!
  19. B--I am really sorry that you're sick again from eating there . I would be upset, too. Hope you gave them an 'earfull' in your email
  20. Count me in on this one! I never realized until I had to that wheat was in so many seemingly unrelated things.
  21. Yes--I agree it sounds harder than it actually is.
  22. Yep--that's what I thought too
  23. Ha--I had completely forgotten about this--my mom used to make us peanut butter and butter sandwiches--also cream cheese and jelly!
  24. Hi Charley--I noticed 2 things, that you felt markedly better right after cutting out gluten, and you tend to feel worse than before when accidently getting some. That is what I experienced, and I believe it's common for someone who's gluten intolerant. What may be happening is that you are still getting gluten in your cooking, and in some of your personal...
