ARCHIVED Breakfast Foods - Quick And Easy
tarnalberry replied to mandy0221's topic in Gluten-Free Recipes & Cooking Tips
I do peanut butter and rice cakes, or scrambled eggs (5 min) and rice cakes fairly often. Sometimes I'll make quinoa flakes in the microwave with flax meal (3 min). And sometimes, I just have leftovers - stirfry, steak, etc. -
ARCHIVED Vacation In Haiwii- Shopping For Gluten Free Breads Etc
tarnalberry replied to martyu's topic in Traveling with Celiac Disease
I found lots of stuff in Maui. I went to Down to Earth in Kahului when we arrived, and went to Mana Foods in Paia a couple of times (as we stayed there). There was another health food store in either Lahaina or Kihei (I can't remember). Had a couple of good restaurant meals (especially Sansei sushi!) but otherwise mostly cooked at the condo or bed&... -
ARCHIVED Family Dinners- A Nightmare And A Rant.
tarnalberry replied to Yenni's topic in Coping with Celiac Disease
I'm gluten and diary free, and talk about food all the time! (other people might feel about me the way that you feel about family! ) anyway, it might help if you can bring into the conversation foods that are naturally free of things that you can't have. it may take some time, and you might have to do some cooking to demonstrate what is so tasty, but... -
ARCHIVED Gluten And Dairy Free
tarnalberry replied to imhungry's topic in Gluten-Free Foods, Products, Shopping & Medications
what is it that you're having trouble with? a number of us on here are gluten and dairy free, and we probably all do it a bit differently. most dairy things, I simply have dropped, and not substituted. I do occasionally use soy, almond, or hemp milk, but while I find them perfectly fine in other things (chocolate milk, green tea lattes, cereal, muffins... -
ARCHIVED Company Christmas Party
tarnalberry replied to Kathy'sUnicorns's topic in Coping with Celiac Disease
ditto what phyllis said - holiday parties are about the people, so eat ahead of time or bring food and go to socialize (and network - work holiday parties are as much about staying up in the work situation as the people). -
ARCHIVED Holding The Fda Responsible
tarnalberry replied to JodiC's topic in Publications & Publicity
That's what I've seen in published studies. I'm interested in seeing other references, however. -
ARCHIVED Holding The Fda Responsible
tarnalberry replied to JodiC's topic in Publications & Publicity
I have 6000 posts because I've been here for a couple years asking a few questions, posting a lot of recipes, talking about a bunch of research, and offering advice about how to adapt when you're one of the 1% of the population who can't have gluten. Companies don't have a strong business case to make 99% of their customers follow the restrictions of... -
ARCHIVED Christmas Meal Ideas
tarnalberry replied to Juliebove's topic in Gluten-Free Recipes & Cooking Tips
all of my guests would disagree with you on the stir fries without soy sauce. red chili flakes, a bit of lemon juice, and agave, makes a good stir fry. some other meat might work, but I'm not sure what you'd want to use... I don't particularly like turkey in this sort of dish, but if you've ruled out chicken, beef, pork, and fish, I'm not sure what else... -
ARCHIVED Holding The Fda Responsible
tarnalberry replied to JodiC's topic in Publications & Publicity
There is no solid scientific evidence that gluten causes cancer or neurologic effects on 99% of the population. And you are not subjected to it, you can go out and easily not be subjected to it. Aside from the kitchens of bakeries and some restaurants (which are private facilities and aren't 'accessible' anyway), there isn't anywhere I can't go due to celiac... -
ARCHIVED Is All This Really Worth It?
tarnalberry replied to 1965kid's topic in Coping with Celiac Disease
you may find that there are actually more people who do have it, but they don't know. 1 in 100 have it, but around 1 in 1000 are diagnosed, so it's not that surprising that you dont know anyone who isn't diagnosed. you can, but you may not have figured it out yet. I went out with friends (after skiing today) for sushi. oh man it was good! it... -
ARCHIVED Christmas Meal Ideas
tarnalberry replied to Juliebove's topic in Gluten-Free Recipes & Cooking Tips
what about a stir fry made with salmon (no need for soy sauce), and veggies that don't include nightshades? -
what was the rash that the derm dx'ed you with? what was the rx he gave you for it? perhaps you have DH (dermatitis herpetiformis), which is the skin manifestation of celiac disease, which some people get. either way, if you know that you feel better on a gluten free diet, why would you choose to do something different that made you feel bad and damaged...

ARCHIVED Hot Cereals
tarnalberry replied to JustMe75's topic in Gluten-Free Foods, Products, Shopping & Medications
the rice cereal you got probably needed more water and a longer cook time. I like both rice-based cereals, millet grits (if bob's is still making them), and quinoa flakes. it's really something you have to try to find out what you like. (I add a bit of flax meal to my rice based cereals for nutritive value. and never bother with the instructions they... -
ARCHIVED Swanson's Organic Beef Broth
tarnalberry replied to wowzer's topic in Gluten-Free Foods, Products, Shopping & Medications
It's probably a useful recipe for the 98% of people who can have wheat. But when you're used to living in the gluten-free bubble, I know it can be hard to remember that. -
ARCHIVED Anyone Else Reacting To Gluten Fed Poultry (and Eggs) And Fish
tarnalberry replied to mm54's topic in Dermatitis Herpetiformis
nope, never had an issue with grain fed animals. the protein is broken down and isn't something that can be really put into the flesh of an animal without changing it to an animal protein. such is metabolism. but franceen is right - the DH reaction in the skin is mediated by iodine, so - even without eating gluten - until you are well and completely... -
ARCHIVED Can You Be Celiac Without Dh?
tarnalberry replied to HilaBean's topic in Dermatitis Herpetiformis
most people with celiac do not have dh, so yes, it's very possible. your rash may or may not be dh (it's not all the same), and you're unlikely to know without a biopsy of it, but either way, celiac/dh is treated the same (as it is the same) - gluten free diet. -
the only thing I'll get in an unknown chinese restaurant is steamed shrimp w/ veggies, no sauce. I've actually had problems when it was steamed chicken, before. a broth issue, I think.

ARCHIVED Quick Question
tarnalberry replied to Kathy'sUnicorns's topic in Coping with Celiac Disease
depends, skin tests (either the prick tests or the subdermal ones) don't require you to be exposed to the potential allergen, as they expose you to it. a blood test, on the other hand, does. a swelling tongue is not, generally, a celiac symptom, but it is a allergy symptom, and one you should take seriously. you may have a wheat allergy, rather than... -
ARCHIVED What Dry Cereals Have You Found
tarnalberry replied to jmomee99's topic in Parents, Friends and Loved Ones of Celiacs
while I think that getting away from cereal as the only breakfast meal is a good idea, I have it on occasion still. generally perkys, nature's path mesa sunrise, and health valley corn or rice crunch-ems. (the later mostly as a snack) -
ARCHIVED Hot Chocolate
tarnalberry replied to isiskingdom's topic in Gluten-Free Recipes & Cooking Tips
agave nectar is similar to honey, and comes from the agave plant. it affects blood sugar to a lesser degree than cane sugar, while tasting as sweet. but honey, sugar, stevia... any sweetener can work, though honey or agave will give you a slightly 'thicker' texture. -
ARCHIVED Hot Chocolate
tarnalberry replied to isiskingdom's topic in Gluten-Free Recipes & Cooking Tips
using cocoa powder will meet your needs - no milk, and no soy in the powder. the slurry is definitely the way to go, and you can also use any other milk alternative you find (almond is one I like). I generally add the agave, to taste, afterwards - if often takes a lot of adjusting, as sometimes I use more cocoa than others, depending on how strong I want... -
ARCHIVED Gluten Free Lasagna
tarnalberry replied to VegasCeliacBuckeye's topic in Gluten-Free Recipes & Cooking Tips
it's in my Open Original Shared Link thread. (I linked the proper page, but you'll need to scroll down a bit.) -
ARCHIVED Experience With Cold Tinkyada?
tarnalberry replied to buffettbride's topic in Gluten-Free Recipes & Cooking Tips
I've used it in a pasta salad and had leftovers with it (cold) before. It's not the same as wheat based pasta, and it gets a bit more firm - slightly more firm than al dente, but it's still perfectly edible. If there's plenty of dressing, it helps moderate that effect, keeping it a touch softer. -
ARCHIVED Hi Fiber, Low Carb, Low Fat
tarnalberry replied to earthgoddess0308's topic in Gluten-Free Foods, Products, Shopping & Medications
Perky's Nutty Flax cereal has 7g of fiber, and if you add some ground flax meal or hemp seeds to it there's a non-trivial amount of fiber (and a reasonable amount of good fats) for 44g of carbs. Despite the fact that I'm hypoglycemic (and particularly sensitive in the morning), I find this works for me. Of course, other alternatives, like a high-fiber... -
ARCHIVED Here's A "little" List For You
tarnalberry replied to scotty's topic in Coping with Celiac Disease
it's worth trying the vegetables that you may be able to have, but well cooked. far more than just you have reported issues with raw veggies.
