  1. That's the thing - you see so many answers because there isn't just one answer. Some celiacs find that they have problems with soy, some don't. You have to figure out your answer yourself, because there's no way we can tell you. (I have seen the claim that the soy protein shows a similar sequence to the portion of wheat that bothers us, but I haven't seen...
  2. Diestel and Applegate farms have prepacked deli meats that are safe.
  3. I think those were banana muffins. If you navigate back to the recipes page off of my website from the pumpkin butter link, they might be there, I'm not sure, but there are a bunch of other recipes. I prefer pumpkin butter with quick breads - the hearty ones, but surprisingly enough, it's good on rice cakes too. And pancakes. I haven't tried it on other...
  4. show him the research studies, the peer reviewed journal articles that demonstrate what happens in untreated celiacs. (you can find these on pubmed.com) or have him read the NIH consensus on celiac disease from their conference last year. (you can find it by googling for "NIH consensus on celiac disease") or take him to the doctor with you and have the...
  5. Yep, in the entry field where you're typing your reply, and where the quote is (you'll see it surrounded by markers that tell you it's a quote, enclosed in brackets), just go in and delete the text you want to remove from the quote.
  6. You can make spring rolls out of rice paper, if you want to give it a try. Raw ones out of rice paper can be tasty as well, but you can also bake or fry them. I've found rice paper at asian markets, though do check the ingredients as there's a version that has wheat flour.
  7. I haven't tested to see how long until it gets moldy :-) but I'm sure it'll stay good at least a week. I don't use much in the way of sugar, though, and that may affect how long it stays good. As for "a while"... depends on how thin the pumpkin you start with is, and depends on how thick you want it. I usually cook it down until it's hard to keep it...
  8. That's a good point - it depends on your company. I work in a huge company where they have to have the resources to deal with these sorts of things for employees and in an area of it where the managers are well trained to understand that they're butt's on the line if they ignore their employees' issues. But, of course, the issues have to be approached with...
  9. You've come to a good place for support. There are people in any of a number of stages of going gluten-free - from still being diagnosed, to having been on the diet for decades. And my condolensces on the health troubles in your family. I hope they are both getting along ok. First and foremost, celiac disease is absolutely not a death sentence. Not...
  10. I didn't mean to imply the texture would be bad or have a problem without it, just that it gives it a different texture, that some people might want to highlight. I'm with you... why add it? (But I'm not a huge fan of fries, so I haven't the culinary expertise to weigh the various methods. Well, except oven baked sweet potato fries. Yum!)
  11. I definitely agree with that. But I think it's the most important question to answer: "Do I have to follow a gluten free diet or not?" I think that question is even more important than "Do I have celiac disease?", because the latter is a subset of the former. I realize that some people find that they do need the additional specifics however. I hope the...
  12. Food poisoning symptoms can come on a bit faster, and fruit can be a definite carrier of that stuff. (It's happened at a number of buffets.) But contamination's always possible.
  13. Good news! You can have cake at a wedding one day. You just have to get a gluten free cake. A number of people on here have done that for their wedding. There's still plenty of stuff you can cook without gluten. Even a lot of baked goods can be made gluten free by using the right combination of gluten free flours. Check out the recipes section...
  14. Texture in the final product, particularly with something that's fried, even potatoes.
  15. Well, some people laugh off things they find uncomfortable. But, I would encourage you to sit down with your mom - nowhere near dinnertime - and talk to her about how her reaction to you makes you feel. Not about whether or not she can remember, not about whether or not she believes you, not about whether or not she cares - just about how her demeanor...

    ARCHIVED I Did It!

    Congrats!
  17. I would encourage you to talk to your boss about the hostile workplace the other employees are making. Not about the food - she acknowledged that she left you out, and sometimes, that's all you can get - but about the employees rude behavior. Regardless of what they are belittling you about, it's harassment, and if you've got any sort of code of conduct...
  18. My point is that it's more than this. The genes tested for are not the only genes that cause celiac disease. There are others that aren't known (and this is known because celiac has been diagnosed in those without either gene). It's sort of like asking someone, who's half a dozen jelly beans in their hands, "do you have a red jelly bean or a green jelly...
  19. yep, as well as almond butter and macadamia nut butter. I think I've seen hazlenut butter too (not nutella), but I don't remember where. unfortunately, nut allergic folks would want to avoid those, while they might be able to have the seed butter. (at least, that's my understanding.)
  20. Rice Crispies, the real stuff, is NOT gluten free. It has barley malt.
  21. Keep in mind that genetic testing also is not fool-proof. Not all of the genes involved in celiac, or gluten intolerance as a separate entity, have been discovered, so you can't actually rule it out if you come back negative on the genetic tests. (The chance is very low - only 2% of people with biopsy determined celiac disease don't carry one of the two...
  22. Being gluten free, or nearly gluten free, may give you false negatives on the blood test or biopsy. The medical profession sees the blood tests as the first step - a screening, with diagnosis confirmed with a positive biopsy. Like ANY medical test, these are not 100% reliable for finding any and all cases of celiac disease, but it's a pretty decent first...
  23. My apologies on misleading you on the SNUBA. My research into it is five years old, and left me with a different impression. :-) When my husband and I went to Hawaii for our honeymoon, we purchased at home and brought with us our own snorkels, masks, fins, and wetsuits. (Yes, wetsuits. Yes, Hawaii. Yes, I'm glad we had them. :-P) It meant an extra...
  24. while I don't know about that brand (though the ginger should be fine - ginger itself is gluten-free), you can make your own pumpkin butter by simmering (and frequently stirring) canned pumpkin puree with a bit of cinnamon and allspice, and brown sugar if you want it. takes a little while and you have to go low heat, but it's better than storebought.
  25. depending on your location, and if you can handle seeds, you may be able to find sunflower butter. also a good pb sub.
