OH PLEASE find that article!! We went to Italy last summer and I gorged on pasta and beer and pizza. Of course, the whole time I thought my symptoms were because I never really at all that stuff that much. We are maybe going back this summer. I know Italy is gluten friendly for sure, but would love to read the article! -
I literally treat gluten like poison because that's what it is. For me there is no "tolerance" or cheating. Heck, even if we get a little bit and don't have a horrible reaction, it's still in there destroying villi and causing who knows what kinds of problems. I sure wouldn't join that study. NO WAY!!!

I take Synthroid and keep reading that the jury is still out on my dosage and whether or not it contains gluten. I tried the generic and it just didn't work as well as far as symptoms. I think the Synthroid is ok because I'm super sensitive and when I eat well, my medication doesn't bother me. You know - the more I read this forum, the more my mouth drops...

I mentioned this as a reply on another topic but thought I'd ask it as a separate question. I keep reading that some celiacs are super sensitive to gluten while others seem to "tolerate" it a little better. If celiac is a confirmed DX with blood/biopsies, wouldn't even a little gluten damage the villi even if it doesn't cause symptoms? Can some celiacs...

This is an interesting question. I get so very sick and have to stay in bed the entire next day and then am tired and foggy headed for two more. I asked during Christmas if the sugar-free mocha at Starbucks was gluten free and the cashier said she thought so but she'd ask. Just so happens the barista she asked just happened to have celiac and told me that she actually called corporate and couldn't get a straight answer so she suggested that I avoid it. I write in Sharpie "do not double dip" on jars and another sign I taped on the gluten bread that says WATCH YOUR CRUMBS. I yell like a crazy person if I find a stray ramen noodle too!!! Follow up... PF Changs emailed me the nicest email and were concerned about the soy sauce in the black ramekin. They also mailed me a generous gift card, which I told them in my initial conversation was completely unnecessary, as I knew I would eat there again. I emailed them back the server's name and the receipt number which showed the gluten-free meals... -
