  1. Hi Karen...I'm fairly sure I can go through first and I know my mom will do everything she can to keep things safe. My step dad on the other hand doesn't get it. For example, 2 of my kids have severe peanut allergies...diagnosed years ago...and he's more than a few times offered them peanuts. Seriously! So, I'm just worried that he will somehow have gluten...
  2. Tomorrow is my first Thanksgiving since my diagnosis. I feel so anxious about it. We will be going to my mom's for dinner. I'm making several things to bring. But I still feel anxious. I don't want to get sick. I trust my mom...she has separate cutting boards, etc to use for when I'm there...but it's such a big meal. So many opportunities for something...
  3. There's a reason we call her Dr Nicole! Never accept that it's all in your head. Only you know what your body is feeling like. Do request that full thyroid panel...it's really tough to get the thyroid to a good spot. I'm working on it now. Keep coming back with other questions too.

  6. Crock pot sesame orange chicken, rice and sugar snap peas for tonight. Really need to start getting things ready for Thanksgiving...we're going to my mom's but I'm bringing a lot of the stuff.
  7. Hi Cristiana, I don't have any answers...not very helpful of me I know. But I wanted to share that since my diagnosis I have tried oats on 3 separate occasions with bad results each time. I miss oatmeal...especially on cold mornings.

  12. Hi Julissa! I'm so glad to hear that! I hope that it continues to help! I know how much it helped me. Keep me posted. Other places to look for it are yogurt, ice cream, other milks...for some reason it is in Costco rotisserie chicken?

  14. Thanks for bumping this! Will you be going to the parade? It's so fun. I've looked into it and haven't found any completely gluten free places in Denver. I'm so hoping someone will recommend something. I really want to keep this tradition going.
  15. Hi Julissa, If your almond milk has carageenan, it might be worth trying to cut it out. It helped me a lot. I'm working on the calories. If I really plan it out and shove food in my mouth even when I'm not hungry I can get to 1800. Most days I'm between 1600 and 1700. But better than the 1500. It's really hard for me to get that many calories...
  16. It seems like anything convenient to eat has soy. It's way harder than giving up gluten...at least for me.

I lost 15 pounds fairly quickly after going gluten free. Then in July when I was still having GI issues I cut out things that seemed to cause other people issues (dairy, soy, legumes...

  23. Me too!! I make it on Friday night and there's enough leftover for 2 more meals for me. I do olive oil and either Fox Point seasoning from Penzeys or a little lemon juice and dill. So good!
  24. It is only food...but it is still hard. It really is. I get it.
  25. I just want to give you a hug for losing chocolate (((hugs)))...for me that would be hardest. I've found a chocolate that is soy and dairy free...Enjoy Life and am thankful to have it. I hope you still have something to eat that you love.
