  1. It's a beautiful snowy day here...going to roast a chicken for dinner...sounds nice and cozy. I will do some roasted veggies and a tossed salad with.
  2. Tonight we are having Asian meatballs with a sesame lime sauce, rice, carrots and sugar snap peas.
  3. Sure...here's a link to the recipe: http://www.skinnytaste.com/2009/04/baked-chicken-parmesan.html I did make my own marinara, although I've used jarred as well. I make the bread crumbs too. I also use more butter and mozzarella than listed. Lol! I guess is just a guideline more than a recipe at this point. For noodles last night I used Ronzoni. ...
  4. Baked chicken parmesan with noodles, garlic bread and green beans.
  5. The gluten free eggo waffles sound really promising! I'd love to get those for my kids for busy mornings. I will be looking for those!
  6. You've come to the right place! ((((Hugs))))! I know the isolated feeling that you talk about and the frustration as well. These things will get better. As cristiana said, coming on here to vent is a great stress relief and takes some of the pressure off your SO. It's a huge change for everyone. And the stress of someone being sick is a test for...
  7. Hi...I just have to chime in and say how much I love Cristiana's use of the word wonky too! I need to figure out ways to incorporate it into my life.
  8. Hi and ((hugs))! That's rough. It sounds like you are doing the right things. I will say that I felt better the first few months and then got much worse. It was really discouraging. Things didn't get better for me again until I gave up dairy, soy, nuts and legumes. I spent months eating only meat, fruits and veggies. Only whole foods and only things...
  9. These were a huge hit with all! I was asked to make them again and one of my boys asked if he could have the recipe when he's grown up and has his own house. Lol! Tonight I'm making chicken enchiladas and cilantro lime rice.
  10. I hear you Nicole. I got all excited when I heard it...but then realized I won't do it. Too much room for error. That's why I never eat out...scared of getting sick. I'm hoping this gets better in time.
  11. Lol! Glad I could make you laugh.
  12. That's good to know. Have you eaten there? I know that you're fairly sensitive.
  13. Just finished a marinara sauce for French bread pizzas dinner. I still need to bake the bread. I will make cheese ones for the 2 younger kids, the works for hubby and my oldest and a caprese...light on the mozzarella for me. I've just started dabbling in a bit of dairy. I'll make a big tossed salad to go along with.
  14. No...I'm really scared to be honest. The only place I've eaten out is the gluten free restaurant. I know that other people do it, but I'm so scared of being glutened because I get so sick.
  15. Wow! Wow! I would love to have pizza from a restaurant!
  16. I do what cyclinglady does...plain coffee...or bring my own. I blend it in my nutribullet at home and it's lovely, frothy drink. It was hard over the holidays at times seeing the salted caramel and peppermint mochas. I wasn't tempted in any way...but had this longing for the yummy treats and the normalcy of being able to get whatever I want. Give yourself...
  17. I had the issue of continually losing weight. I couldn't figure it out. I went on to my fitness pal too and it said I should be getting close to 1800 calories a day. When I calculated what I was actually getting it was around 1500...so there you go. I still struggle with getting enough eating only meats, fruits and veggies. I do put coconut oil in my...
  18. The kids have a snow day...they are so excited to go sledding! I'm making chili in the crock pot and corn bread to go with for dinner to warm everyone up.
  19. I would love this too! I miss pizza...really good pizza. I've done the chebe and Bob's Red Mill and they turned out fine...but not great. I'd love to be able to make my family pizza that resembles something we'd get at a pizza place.
  20. Unfortunately, yes. I've given up soy, dairy and legumes. The thing that helped the most was giving up carrageenan...an additive found in almond milk, yogurt, etc. For me it was in the almond milk I was using to make my smoothie each morning. I read about the digestive issues it could cause and was surprised to find it in my almond milk for sure. ...
  21. Congratulations! Super excited for you!
  22. It's really good and best of all, everyone likes it including the 3 kids! Tonight we are having crock pot jerk chicken tacos with mango salsa and rice. New recipe...hope its good!
  23. Hi Nicole...someone recommended the book by Sue Shepard to me. I had it on hold at the library, but by the time I got it the holidays were upon us and I didn't end up doing anything with it. It looked good if that helps. Lol! I have a hard time mentally thinking about giving up any more food right now.
  24. Coconut flour crusted chicken tenders, tossed salad and roasted sweet potatoes, potatoes, yellow beets, carrots and red onion.
  25. Hi Sheri and a big welcome ((hug)) to you! Like so many on this board it sounds like you've been diagnosed with just about everything other than celiac disease for years! It sounds like a gluten challenge would be a scary thing for you...I know that nothing could make me eat gluten now. I hope that you continue to feel better gluten free...it will take...
