acheira, I would say the instances are high with the ratios. It must be very high in Italy if they manditorily check every child before 6 years now. I am Scandinavian/Italian so, another high ration. I don't eat vinegar that is derived from wheat or processed with wheat because a little bit causes a lot of problems with me. I use Balsamic, Rice, and wine vinegars. Much of the time I use olive oil and fresh squeezed lemon juice. for salad dressings.

Tina, the first week is not so bad and being gluten-free is not so bad either. I have had even great success in a few restaurants and not been glutened. I do not do red meat, haven't for many years because of allergic reactions to what they were fed or shot-up with. Dairy is a major family problem, so that is out. For all the education doctors have they aren't that smart, generally speaking I would rather see a veterinarian. Listening to your body is the best idea. Perhaps their problem is like so many others. Perhaps they do not think that Celiac disease is a valid life-threatening disease. There are many who just think it is some urban legend. I have talked to doctors who thought it was impossible to have hypglycemia or Celiac. -
Migraines, a way of life for me. 99% of mine are due to barometric pressure changes. I live in literally the worse place on earth for anyone with migraine headaches. If I am not at work or don't have to leave the house I take Novachlorapromazine, they kill the headache in an hour but then I spend the rest of the day practically a drooling idiot.

The other problem with designer foods along with cost is a possibility of being glutened. Making it myself I know what it was near and what is in it and I won't be glutened. I accidently got glutened today because I think the last person on this desk had bread crumbs. -

There is really no difference in the way you eat on gluten-free except you exclude all wheat and wheat gluten items. You can get rice noodles, make stir frys using corn starch, corn starch in gravy is good. You can still have stews and chili. I am angry with doctors for not listening and being so dense. I am angry for having to be sick for half my life. I wish I would have known about this so very long ago. I would agree with the others. I would say take the whole family gluten-free that way there is no possibility of cross contamination at home and chances are you have it too. You don't need to be working with gluten or having it in the air to contaminate the others and possibly yourself. -

I have so far lost 20 lbs with being gluten-free in the last three weeks and this was with eating chocolate over xmas. I only gained before I was gluten-free. -
