You know, I would jsut start making things to take to her house that you CAN eat and then she will see that you can eat just about anything that is not processed, and it is just plain healthier. I have honestly not found it that hard to eat gluten free. Basic things like using cornstarch to thicken instead of flour, is just easy and not a big deal. Eat...

ARCHIVED Egg-replacers For Namaste Mixes
jnifred replied to Kasey'sMom's topic in Gluten-Free Recipes & Cooking Tips
I have not tried to replace the eggs in any of the mixes, but aren't these just the BEST!!!! I made the muffins yesterday morning but instead of a cup of water, I used 2 mashed bananas and "about" 1/2 cup water, plus added 3/4 cup chocolate chips. My 10yo was crazy over them "mom these are the BEST muffins EVER, can you make them for my class.....blah... -
We went on Costa cruise lines this January. The Costa Mediterranea was the ship we were on. My Maitre'd actually has a son who has celiac, so he was AWESOME, they made me calamari, and special deserts, clam chowder, yummy things that I only get at home normally after working hard to make them myself. Anyway, I don't think they cruise Alaska, they are...

ARCHIVED Mcdonald's French Fries Not Safe?
jnifred replied to pixiegirl's topic in Gluten-Free Restaurants
ok, I was trying to keep my not so nice thoughts to myself, but I am in a mood, and so here goes. We are talking about FRENCH FRIES !!!!!!!!!!!!!!!!!! Some of you seriously need to take a gluten free chill pill. So Mc'D's is trying to figure out what they are doing, they are a HUGE corporation, with a bizzillion people trying to make one decision... -
So is horseradish bad????? Any gluten-free ones that anyone knows of???? A few weeks ago I made a birthday dinner for DH, got MISERABLY sick afterwards. I cooked it all, and the only thing it could have been was the prime rib which was pre-seasoned at the store, which I only had MAYBE 4-5 bites of......BUT I dipped those bites in horseradish sauce...

I am THIRLLED to read your post. We eat at Chili's frequently and I have always ordered the grilled chicken fajitas with plain chicken, the marinade they use has soy sauce in it (go figure!), so the manager has the chef use a plain chicken breast. and of course I omit the tortillas, I eat it more like a salad. Anyway, I have not had any problems and the...

ARCHIVED Emer'gen-c
jnifred replied to pinkpei77's topic in Gluten-Free Foods, Products, Shopping & Medications
I just read through the ingredients on mine, I have tangerine and raspberry and didn't notice any difference on the ingredient list. Is it in the natural flavoring of raspberry??? How did you find this out???? My older boys love it too, we all drink it, they love it after school, before they have a game. I love it anytime......chasing, carpooling... -

ARCHIVED gluten-free Pizza Crust Questions
jnifred replied to danemom3's topic in Gluten-Free Recipes & Cooking Tips
Chebe all the way, I love their crusts, and I add the cheese to mine. I like thin crust pizza though, so I alwasy roll it very thin and bake about 10 minutes before adding toppings. It is so good, we had a pizza party last month and I made about 6 pkgs of Chebe pizza crust, about 12-15 crusts, and NO ONE had a clue they were all gluten free. No leftovers... -
ARCHIVED Why The Varied Reactions?
jnifred replied to jnifred's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
That's what I was wondering, if different types of gluten cause different reactions be it a difference in the severity, or just a difference in the type of reaction. It makes sense I guess about the beer thing, but why didn't I get as severe of a reaction from that stupid cookie I ate a few weeks ago????? I really wonder what was in that meat, I may have... -
LOVE Carrabas, have not eaten there though since going gluten free, so it is nice to know they have a gluten-free menu, but they have EXCELLENT Italian food!!!

ARCHIVED Why The Varied Reactions?
jnifred posted a topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I am asking this because last night I ate something and have NO IDEA what it was and I was SICK, gurlging stomach, nauseous, cramps like crazy, on the toilet but not going all night!!!! It was awful. I haven;t felt that bad in a long time!!! I still feel a little blech today, but just at food. I am almost afraid to eat, I've had popcorn and corn tortilla... -
ARCHIVED Any Reactions To Tinkyada"s Brand Of Rice Pastas?
jnifred replied to michelleL's topic in Gluten-Free Foods, Products, Shopping & Medications
Grandma Ferndon...she makes GOOD stuff. I love her Peanut Butter cookies, taste like the "real" thing, only it is pricey. And I sometimes have issues with tomatoes, tomatos have a lot of acid in them. -
ARCHIVED Chebe Cookie Recipes?
jnifred replied to Jnkmnky's topic in Gluten-Free Recipes & Cooking Tips
The only cookie type thing I have made with Chebe is using the cinnamon mix, I rolled it thin though and it was more crackerish than anything. I did make thin biscuits with one of the flavors (not sure which one) and I lightened it up a lot by adding some baking powder, I think 1 tbsp. I think if you added BP to the cinnamon mix and rolled it in sugar/cinnamon... -

ARCHIVED Autoimmune Diseases In Families
jnifred replied to chrissy's topic in Related Issues & Disorders
one thing to remember is that autoimmune diseases are so inter-related with symptoms that they can sometimes be almost impossible to diagnose. My rhuematologist once told me that sometimes it doesn't matter what you call it, they are almost all treated the same and what works for one person won't work for another, so we just had to experiment to see what... -
ARCHIVED Hands Swelling In Morning

Packard... I agree with you. I was on Enbrel for 3+ years and it worked wonders for me. Before that I was on a bunch of nasty things the still made me have flare-ups. I have been off Enbrel for a couple years now and was on a varying dose of prednisone, as needed. I haven't needed prednisone since going gluten free in November. Longest I have been off... -
ARCHIVED Hands Swelling In Morning
jnifred replied to melisadki's topic in Related Issues & Disorders
Yep, my right thumb was completely useless for 5-6 years. It was always swollen and never went away. Even now, all the swelling is gone, but it is more stiff than the left thumb and I can not bend it as far. My hands flare up in the heat/humidity. Cold weather I do fine in, but when it gets hot and humid, its not good for me!! So I do my best to not... -
ARCHIVED Hands Swelling In Morning
jnifred replied to melisadki's topic in Related Issues & Disorders
that was my first symptom 10+ years ago when I realized I had some auto immune thing going on. I was diagnosed with Rhuematoid Arthritis back then. I couldn't grasp a jar/bottle, could barely open the doors and had trouble pulling on my clothes in the AM. I also had a lot of other joint pain, felt like a 90 year old getting out of bed every morning when... -
I can't help you yet, but I am working on that too, along with chocolate chip cookies and Peanut butter cookies. I have thrown away so many batches of PB cookies it is sickening. Those flourless recipes are NASTY. I will let you know if/when I come up with something...

It was Costa cruise line, they are an Italian cruise line, very European. There are 5 ships, I think. They sail the Mediterranian Ocean for a few months, then cross the Atlantic, sail throughout the Carribean for a while and then back to the Med. in March. I don't think any of the employees spoke less than 2 languages, most knew at least 3, only a...

My travel agent told them I needed a gluten free diet beforehand, but I think they had a lot of gluten-free pastas on hand already. This was our first cruise and we loved it!!!! DH said he wants to go every year with me if my mom will continue to watch the boys!!!

Got back late late late Sunday from our cruise. I was eating like a queen for a week. Our Maitre'd has a son who has celiac so he was very understanding and personally checked all of my meals. He had a couple special desserts made for me, fruit tarts, baked Alaska, etc. I had bread at dinner every night, he made sure all my meats were grilled separately...
