  1. Bette Hagman's "Gluten Free Gormet" has a GREAT egg noodle for soups. Visitors don't even realize they are gluten-free, CF, etc. Page 93 I think and they aren't difficult to make.

    My family begs for chicken soup with my homemade noodles every week...the only way to get out of it is to make them some of my chili instead but that doesn't always work...they want the soup with the noodles.

    I have one of her cookbooks, but not that one I don't think. I'll check to see if it's in the one I have and if not, maybe an excuse to buy another cookbook! :D

  2. My travel agent told them I needed a gluten free diet beforehand, but I think they had a lot of gluten-free pastas on hand already.

    This was our first cruise and we loved it!!!! DH said he wants to go every year with me if my mom will continue to watch the boys!!!

    I've been on two cruises so far, the last being in August of 2005...I didn't know I was Celiac at the time and in fact that cruise is what lead me to the discovery of Celiac...just love cruising and knowing I can eat well makes it so much better, lol.

    Nut butters: they have a variety of different types of nut butters like hazelnut butter, cashew butter, etc.--some are pricey but I need to rotate my stuff, so it's worth it for me)

    Lundenburg(sp??) Rice Chips (Pico de Gallo is my favorite followed closely by Sea Salt...BBQ is also good)

    Rigoni di Asiago Cranberry Fruit Spread

    Imagine creamy organic potato leek soup

    Thai Kitchen rice noodle soup bowls (read labels on these, I found a couple that weren't suitable but I can't remember if it's because they had casein or gluten)

    I also love their frozen fish packets

    I buy some alternative meats there like buffalo, ostrich etc.

    I love their frozen fruit and vegetables as well--frozen cherries, yum!

    I've also seen rice tortillas...I didn't buy my package from them but it's the same brand and when you're craving something like that they're pretty good

    I also buy a variety of cooking oils and sprays so I can rotate those as well

    Erewhon Corn Flakes

    New Morning Cocoa Krispie Rice Cereal

    Millet Puffs (cereal) (kind of bland, but good with agave nectar)

    Agave Nectar and/or honey

    Cream of Buckwheat hot cereal

    Before I found out I was casein intolerant:

    Gluten free bakehouse peanut butter cookies, chocolate chip cookies, corn bread, brownies, apple and cherry pies.

    They have a great selection of yogurts

  4. Rachel, thanks for posting that link. I live in your area and am wanting to find someone who will work with me to try to find out WHY I feel badly, not just prescribe medications. I'm recovering from surgery right now, but I'm due for an annual exam in the next month or too, so may go to them instead of my regular MD. Thanks!

  5. I don't have an official diagnosis, but I've put the pieces together from the Enterolab testing I had done in November and the positive response to diet. Looking back, the past few years (including this one) I did get sick around this time. Last year I was VERY sick from November to February or March. Interestingly, I had been eating a low carb diet for at least two years before that, but loosened up around the holidays last year and enjoyed some of my mothers yummy cookies that she only makes at Christmas. I also sampled goodies people brought to work--not a lot--just a little here and there. This year I started early--after a cruise at the end of August, I started eating breads and stuff again...sure enough I was sick for the entire month of October and the first half of November.

    Yes, I agree!!! I thought of another one while posting to the poll thread about personality...I am finding that I am in a lighter mood much more often than I was a few weeks ago. Now, that's something my friends can get behind, lol. :P

  7. I am so thrilled to see people experiencing some improvements, even if not major.

    I found another one yesterday...color in my cheeks! I haven't had color to my face in ages and yesterday (granted I had just cleaned the stove a bit before that, but still NOTHING has given me rosy cheeks--not even working out, lol) I noticed a little color in my cheeks!

  8. Good luck, sounds like you've got a great start. I know what you mean about habit...nearly did the same thing at work the other day. I'm used to walking by everyone's desk and taking a piece of this or that...nearly absentmindedly did that the other day with a pea sized piece of krispy creme donut. :blink:

  9. One more thing I noticed today:

    Itching - I am having much less itching on my legs and bottom of my foot!

    Nini - it's funny because I'd be out in public with a friend, and my eyes would start burning and my nose would feel funny...and then my friend would turn around and say "someone is wearing perfume"...I couldn't smell it, but I'd react nonetheless.

I've been noticing a few improvements since going gluten-free and I thought it might be helpful to list them...it's easy for me to get caught up in looking for the major improvements and miss the smaller ones. So while I'm waiting for some of the major issues to resolve, I wanted to note the other changes. Now some of these may have nothing to do with gluten-free or casein-free, but I've noticed them since going gluten/casein free. (As a reference I went gluten-free in November (although didn't obsess about cross-contamination), then added casein-free and became more cautious of cross-contamination around the middle of December after I got my Enterolab results.)

    Sense smell: I haven't had sense of smell in years, I mean years--something has to be incredibly strong for me to smell it. Since going gluten and/or casein-free I've been catching whifs of stuff here and there--like my shampoo, soap, lotion which aren't really scented, lol. It's been kind of fun.

    Nasal congestion/constriction: My nasal passages were always slightly swollen...they've been clearer than they have in years in the past few weeks--not completely clear yet, but definitely better.

    Knee pain: a few months ago I developed a pain in both knees, with the right being the worst. It was bad enough to stop me from taking another step a couple of times and for my GP doctor to refer me to a surgeon who didn't think surgery would help. The pain is virtually gone--I've only felt it once in the last 4 weeks, and that was only slightly.

    Dizziness/lightheadedness: I've suffered from dizziness and lightheadedness for at least a couple of years now--even while sitting, eyes open and not moving, I could sometimes feel it, and it would get much worse when I'd get one of my chronic sinus infections. I haven't felt it at all in the last 4 weeks.

    Sleep: I've had insomnia for years, and have always been a light sleeper--getting up at least once per night to go to the bathroom. In the last two or three weeks, I've actually slept straight through--nearly 8 hours without waking or getting up--at least three or four times!

    I was so happy, I just wanted to share! Thanks for letting me ramble on! :D

  11. I'm still new at this myself so not sure how much advice I can give, but one thing that help me is to concentrate on the things that I CAN have. I'm thinking I'll make a list of all the yummy things that are gluten-free that I LOVE. When I'm feeling sorry for myself I'll read the list and if I want, I'll have something. The other thing I do is to try to NOT beat myself up over what has happened in the past. It's history, it's gone, best to forget it. Start fresh today and just decide to not think about it anymore (sometimes easier said than done, I know). Hope that helps some!
