  1. Wow - there sure are a lot of us Boulderites on here! Welcome to the club, Bob! Just one thing that I wanted to address here: This may have nothing whatsoever to do with gluten. I've had two of these in the past year, and they both turned out to be MRSA (Methcillin Resistant Staph. Aureo-something) infections. This is a VERY nasty...
  2. Deby's gluten-free cafe! The entire restaurant is gluten-free, and they're very accommodating of other intolerances as well. There are actually quite a few good options in Denver that have been discussed here before; try searching for Denver in old messages. Have a good trip! Jeanne
  3. You *do* need carbs, just not necessarily from grains - and maybe not as many as you're accustomed to. Veggies have lots of good carbs, especially things like beans and legumes (as long as you don't have an intolerance to those as well). Don't worry; your blood sugar will let you know if you're not eating enough of them! Jeanne
  4. Did you start experiencing these symptoms during Phase 1 or Phase 2 of South Beach? What happens for some people is that Phase 1 of South Beach is the first time that they've ever been totally OFF gluten. This gives the body a little bit of time to recover, and as many on this board will tell you, re-introducing gluten after a period OFF gluten can result...
  5. Oooooh, good question! So, is there any way to make sure that the cows DIDN'T eat wheat? What about organic milk? Any companies that guarantee grass-fed only? Jeanne
  6. This sounded great to me, so I just looked up the gravy mix. I'm gluten/dairy/soy-free, and unfortunately it contains soy. Does anyone know a good gluten/dairy/soy-free gravy mix? Unfortunately I'm going to be out of town for Thanksgiving and won't have access to the turkey drippings to make my own. Jeanne
  7. Hi, Jay! Congrats on all the improvement you've had on the gluten-free diet! I also have no diagnosis, but had a lot of the same symptoms you mention (eczema, etc.) that have cleared up on a gluten-free diet. When I started the gluten-free diet, I purposefully gave myself some time not to worry about my weight, and just to get the hang of gluten-free...
  8. The Costco cashews are fine (at least, I don't seem to have a problem with them, and I eat them every day). They DO have peanut oil in them, so stay away if you have a problem with peanuts. Jeanne
  9. When I asked for tests from Kaiser (for me, and later for my son), they absolutely refused to run the full panel and would only do the TTG test. I tried to argue, and they insisted that the TTG was the only one that's evidence-based. (Which I interpreted to mean that they were only interested in diagnosing biopsy-provable celiac disease, and not any other...
  10. Woo-hoo! I'll have to check it out! Jeanne
  11. For what it's worth, I eat Kirkland cashews just about every day and never have a problem with them. Jeanne
  12. This is a big topic with me right now; I'm currently dealing with my second methcillin-resistant staph infection (affectionately known as MRSA) in 6 months. Apparently it's only within the last year or so that people are starting to acquire this from the community (as opposed to hospitals, where all sorts of nasty things hang out). When I got the first...
  13. Read labels carefully! The regular THAI coconut milk contains soy lecithin, but the lite version doesn't (at least, last I checked). Jeanne
  14. Thanks! I'll check that out. Jeanne
  15. I checked out PF Chang's menu, and I'm afraid Asian isn't going to work for me because of the soy sauce in everything. Any other ideas in Durham? Anyone? Jeanne
  16. I'm taking a trip to Durham, NC in a couple of weeks; can anyone suggest good restaurants where I might be able to get a gluten/dairy/soy-free meal? Preferably near Duke; this is a professional trip and I'll be be going out with groups most nights, so it could be difficult to go too far afield. I went to college there, so I know the area reasonably well...
  17. Don't know about Estes Park, but Boulder is a great place for gluten-free. Some places that I've found: - Orchid Pavilion (Chinese) will cook with wheat-free soy sauce on request. - Gemini Kitchen (Thai) has a gluten-free menu. - Haven't been there yet, but I've heard that Chez Thuy (Vietnamese) can accommdate gluten-free. - Sunflower (assorted...
  18. I second that! (Or third it, or fourth it, or whatever ) My Enterolab results were negative after 8 months wheat-free and 4 months gluten-free. But the gene test was positive, and I KNOW how much better I feel off gluten than I ever have in my life, so I'm gluten-free for the long haul, tests be darned! Jeanne
  19. Ditto - Anna's bread mixes are amazing! Jeanne
  20. If you can get through the withdrawal period, you might find that your cravings miraculously go away after awhile. They certainly did for me, and now I firmly believe that the craving was one symptom of the intolerance. This is discussed more in the book "Dangerous Grains," which many on this site recommend highly. Jeanne
  21. No solutions here, just a heartfelt "Me too!" Dairy and soy both give me eczema, and sometimes it's awfully tempting to think, "So what if my fingers itch and crack for a few days?" I've been happily gluten and dairy-free for over a year now, but having to cut out soy recently has been HARD. No more soy lattes, no more Chinese food, and eating out is...
  22. Sorry if this is butting my nose in where it doesn't belong, but why wean him? If he really can't tolerate milk or soy, breastmilk is going to contain much more nutrition than any other substitute. If you feel strongly that it's time to wean, then so be it, but if not, food intolerances are a *very* good reason to consider extended breastfeeding. Jeanne
  23. I bought the book about a month ago, and I've been doing the exercises for foot pain (I have plantar fasciitis in one foot). They're definitely helping, and while my foot isn't 100% better, it's noticeably better and still improving, so I intend to keep doing the exercises. Good luck! Jeanne
  24. Okay - but what do you do when you're travelling and staying in a hotel? I don't travel all that often, but I do occasionally. (In fact, I have a business trip coming up in October, and I'm pretty anxious about how I'm going to find food.) Jeanne
