And the key to making a custard base (which is what ice cream with eggs is), is to temper your eggs with the warm milk solution and wisk continually (with no heat) when you add the tempered eggs back to the milk base. Slowly heat, wisking continually, until your custard forms. Do any of this too quickly or hot and you have scrambled eggs in milk. Gross....
  5. I used to work as a lab assistant in a parasitology lab. Once a week at lab meetings, someone would pick a paper, present it, and then we would analyze it and pick it apart. It was then that I realized that much research has holes, there are always more questions, and nothing is ever "proven" in science...unless you are Newton and discovering basic Laws...

  7. I'm wondering how the psyllium husk in the bread makes you feel? We follow SCD because of my daughter's SIBO and have steered clear of harsh fibers. But she's doing really well right now so I'm tempted to add the Julian's bakery paleo bread. Thoughts?

I think the Columbia U paper only established that there was intestinal permeability and innate immune system activation in folks with NCGS. That doesn't really rule out future celiac. But I noticed after about 2 weeks of my challenge that when you pulled my eyelids down it was pale and my hands and feet would be cold a blue, both symptoms I used to get when anemic as a young adult. So I'm stuck in the land of NCGS with doctors recommending low Fodmap diets. Of course the doctor doesn't hear when I say it's not a Fodmap issue.   20. I have been taking Hydro C (Open Original Shared Link) which has the same effect. I was instructed to take it first thing in the morning on an empty stomach. That increases the absorption and then elimination with water into the colon. I take 1 tsp, plus use a glycerin suppository (otherwise nothing happens) and have a BM within 30 minutes.

  22. Just saw the GI. He is going straight to endoscopy on Monday. I will have been 4 weeks on my gluten challenge. He is confident that is long enough for endoscopy.   23. I'm actually thinking of insurance and approval of tests such as bone density. With a celiac diagnosis, they have to approve it even if you are "too young" to qualify for it. That's the one that comes to mind.
  24. A gluten challenge is terrible. I'm on week 4 of a 6-12 week gluten challenge and I want to just cry most days. You may not get the health care and screening you need without an official celiac diagnosis. I know it's aweful to go back to gluten now, but you are very close to being done.
  25. It makes a difference if you are Catholic. Don't want to get into a debate about why, but Catholic's must use some form of wheat in the host. There is no such thing as a gluten free communion wafer at a Catholic Mass. The solution for a celiac is a LOW gluten host made from wheat starch. That is not a solution that works for many celiacs.
