I underwent a 1 month gluten challenge for testing. No blood work was run (grrr), endoscopy was normal. Oh well. NCGS, I guess. It's a personal choice (obviously). i have a daughter who did not test positive on her gluten challenge. We were told to continue eating gluten. I took her off of it. And the key to making a custard base (which is what ice cream with eggs is), is to temper your eggs with the warm milk solution and wisk continually (with no heat) when you add the tempered eggs back to the milk base. Slowly heat, wisking continually, until your custard forms. Do any of this too quickly or hot and you have scrambled eggs in milk. Gross....

I used to work as a lab assistant in a parasitology lab. Once a week at lab meetings, someone would pick a paper, present it, and then we would analyze it and pick it apart. It was then that I realized that much research has holes, there are always more questions, and nothing is ever "proven" in science...unless you are Newton and discovering basic Laws...- 3 replies

I'm wondering how the psyllium husk in the bread makes you feel? We follow SCD because of my daughter's SIBO and have steered clear of harsh fibers. But she's doing really well right now so I'm tempted to add the Julian's bakery paleo bread. Thoughts? -

I think the Columbia U paper only established that there was intestinal permeability and innate immune system activation in folks with NCGS. That doesn't really rule out future celiac. Also want to add: I have a history of anemia. I was not anemic prior to my challenge. No feratin levels checked. But I noticed after about 2 weeks of my challenge that when you pulled my eyelids down it was pale and my hands and feet would be cold a blue, both symptoms I used to get when anemic as a young adult. Thank you Jmg. Yes, I read with interest that paper in 2016. There certainly is much they still do not know. And hopefully in the somewhat near future there will be celiac tests that don't require an extensive challenge and additional tests to solidify just what is going on. The biopsies came back negative. No blood work was run, and with only a month long challenge, I doubt it would show anything anyway. So I'm stuck in the land of NCGS with doctors recommending low Fodmap diets. Of course the doctor doesn't hear when I say it's not a Fodmap issue. I have been taking Hydro C (Open Original Shared Link) which has the same effect. I was instructed to take it first thing in the morning on an empty stomach. That increases the absorption and then elimination with water into the colon. I take 1 tsp, plus use a glycerin suppository (otherwise nothing happens) and have a BM within 30 minutes. -
So when potatoes are whipped instead of mashed, it breaks the starch molecules and they become gummy and really sticky. I'm guessing that's what he was referring to. But clearly he doesn't know that the gumminess of gluten and the gumminess of potatoes are not the same thing. It's like glutinous rice. It's just starchy rice. No gluten at all. The lack...

Just saw the GI. He is going straight to endoscopy on Monday. I will have been 4 weeks on my gluten challenge. He is confident that is long enough for endoscopy. He also said he prefers to NOT rely on the blood test first because too often you are not positive yet but the damage or inflammation shows on endoscopy. I have been feeling worse and worse... -

I'm actually thinking of insurance and approval of tests such as bone density. With a celiac diagnosis, they have to approve it even if you are "too young" to qualify for it. That's the one that comes to mind. -

A gluten challenge is terrible. I'm on week 4 of a 6-12 week gluten challenge and I want to just cry most days. You may not get the health care and screening you need without an official celiac diagnosis. I know it's aweful to go back to gluten now, but you are very close to being done. -
It makes a difference if you are Catholic. Don't want to get into a debate about why, but Catholic's must use some form of wheat in the host. There is no such thing as a gluten free communion wafer at a Catholic Mass. The solution for a celiac is a LOW gluten host made from wheat starch. That is not a solution that works for many celiacs.
