  6. You sound like my son's pediatrician. We were in for son's well-child visit and the gluten-free diet came up again. All tests have been negative, but he does SO MUCH better gluten-free. The doc said that tests can't tell us everything and keep up what works. At some point I think research will show that celiac disease is a very small part of the gluten...
  7. Another thing to think about is that you could be gluten intolerant, but not have Celiac Disease. If this is the case, you'll NEVER have a positive biopsy or blood test, but gluten will still be poisonous to you. Some will argue that only those with true Celiac Disease should avoid gluten, but "anecdotal" evidence proves otherwise.

  10. Two of my brothers-in-law are from Iran and they make delicious rice dishes. Try adding cooked lentils, sauteed onions, garlic, butter and salt to taste. Isn't it interesting that all of the sudden you can really see what's been there all the time. You're probably right about all the members of your family. Hope they'll all be as open-minded as your brother.
  12. I'll try to answer a few of your questions. Casein is the protein in milk. It is in every dairy product - milk, yogurt, cheese, butter - and also can be found in things with whey, sodium caseinate or milk solids. Gluten free specialty foods are expensive, but many "normal" foods are naturally gluten-free. Things like meat, poultry, eggs, beans, fruits...
  13. You've gotten some good ideas. The only other one I can think of is to cook chicken tenderloins in taco seasoning, wrap in a lettuce leaf and then wrap in a corn tortilla. Secure with a toothpick. You could put on some cheese and sour cream too (we don't do dairy). I make these and wrap them in foil for when we need to eat on the go.

He's been mostly dairy free since he was 18 months old, and has been gluten "light" for his whole life since I've been wheat free since he was an infant. But something about going completely gluten-free was a battle. He tested negative on all the tests, so it was extra hard to convince him...

I read somewhere (I'll try to find where, I think it might have been on Enterolab's website or a link from there) that 1% of non-DQ2 or 8 Celiacs had DQ3, subtype 7, which is almost exactly like DQ8. My son, who is not officially diagnosed Celiac, has a double copy of DQ3,7 and is DEFINITELY gluten...

Or - Having 10 minutes to find 7 different public restrooms in the downtown area.   22. They do rise a little - not the same as "regular" ones. Fiddle-Faddle - I hope you like them! You'll have to tell me one way or the other. (I promise to not take it personally if you don't like them.) My kids like them with honey butter or jam the best.

  24. Gene testing would rule out Celiac, but wouldn't rule out non-Celiac gluten sensitivity. I had many Celiac symptoms and have improved greatly on a gluten-free diet, but my gene test was negative. To tell someone that they don't need to worry about gluten, because they don't have the Celiac genes isn't necessarily a good thing.
