  1. Sure! 2 C gluten-free flour (Br. Rice, potato starch, tapioca starch, xanthan gum) 1/3 C Butter (or margarine or shortening) 3 tsp. Baking Powder 1 tsp. sugar (Leave out if making dumplings) 1/2 tsp. salt ONLY if using shortening 1 C Milk (or rice milk) Cut butter into flour, baking powder, sugar (and salt if using shortening). Cut into very fine...
  2. Lisa, I'm so sorry you're having this much trouble. I hope you can get in to see a competent doctor SOON! Is it actually your stomach or cramping type pain? I had a twisted ovary once and it hurt so bad I was vomiting. It can be excruciating. I hope you figure out what's wrong and get better fast.
  3. I think he started it at age 8 also. I'm sure it was in 3rd grade. At first we thought it was because of stress (we were in the process of adopting our youngest at the time). It was getting REALLY bad for a while. He would be somewhat aware, but not in control of it. We first started trying gluten-free about a year ago, but he wasn't cooperative. But...
  4. My biscuit recipe is very similar to this and works out pretty well. I use 1/3 C butter or shortening instead of only 1/4 C. (The butter gives them a better taste.) I use br. rice flour, potato starch and tapioca starch, sifted with xanthan gum. I also use this recipe to make dumplings and it works well. Keep trying - you'll get the hang of it!
  5. Your hubby sounds very similar to mine. He can't/won't see that he might have a problem too. He KNOWS the kids got their "bad genes" from me and he also says that I think everyone either has Celiac or gluten intolerance. Funny thing is, he's always telling me about people at work that he's sure must have problems with gluten because of different symptoms...
  6. Welcome! Feel free to jump right in!
  7. What does she like to eat? Maybe we can help you modify some recipes for things she likes. I have 4 kids and we don't have a lot of extra money for food and we all eat gluten-free at home. We eat a lot of stews, soups, tacos, salads, spaghetti (less expensive at Asian markets or Trader Joe's), meat and potatoes or rice and chili.
  8. Did you know that it isn't necessarily a bad thing to get sick from taking probiotics? It could mean that you have an overgrowth of bad bacteria and the good stuff is coming in and starting a war. Or it could mean that you're intolerant of something in the formula. When I first went on pro-biotics (can't remember the type the doctor gave me) I was extremely...
  9. My 11 year old son has struggled with the eye rolling thing. Somewhere in the "Parents of kids..." section I started a thread about it, probably 8-9 months ago. Sorry I can't remember what it was called or how to find it. Anyway, since he's gone gluten-free, it has gone away. One of the ways we can tell if he's been glutened is that his eyes start doing...
  10. I keep seeing commercials for new shows that look boring. I think we need a Celiac reality show. How about this: Contestants are nominated by Celiacs and those with gluten intolerance. The ones chosen are those who have given their Celiac friends the hardest time. Contestants get one session with a dietician not well-versed in gluten-free eating...
  11. Soy lecithin is a derivitive of soy. Did your doctor tell you to avoid all soy? Some people who are sensitive to soy can handle soy lecithin, some can't.
  12. Do you know what comes up first when you google Celiac? Celiac.com! That means we'll probably be getting more visitors and "lurkers" here, which is GREAT! Let's all get ready to welcome newbies and answer questions. Just think about how many people will be interested and possibly visiting here after next week's show!
  13. Thanks for the suggestions, Allison and Carla. There is a community orchestra in our town - I'll give them a call.
  14. How old is he? Some of this might be hormone-related if he's 11 or 12. That being said, he sounds just like my son about a year ago when he was 10, almost 11. His teacher wanted me to get him tested for ADD and we saw all the behaviors that you mentioned. We went to the pediatrician, who agreed that we should start by looking at food intolerances. He...
  15. This is great! But I have one question. (Please forgive me if I'm misunderstanding this, it's getting late and I'm tired.) Does this say that naturally gluten-free foods can't be labeled gluten-free? Or does it mean that no company can claim, for example, that their milk is gluten-free without noting that all milk is gluten-free. (Kind of like companies...
  16. I'm so glad you're fully convinced. Now you understand why we all encouraged you to give it a try!
  17. This didn't happen to me, but it was weird. Someone stole 3 pink flamingo decorations and stuck them in my sister in law's yard. They couldn't figure out where they came from until a few days later when someone came knocking on their door, furious, and demanding to know why my SIL/BIL had stolen the flamingos from their yard. They were embarrassed and...
  18. Well, band just might be fun! I "let" the kids play "Mary Had a Little Lamb", "Hot Cross Buns" and "Jingle Bells" out of their book and they were thrilled. Apparently, the former band teacher hadn't let them play any songs yet, so they were excited. My nephew went home and told my SIL, "It was the best band ever - and Aunt Liz was our teacher!" I...
  19. We like finger foods! Tiny meatballs cooked in barbecue sauce, served with toothpicks Chips and salsa Turkey bacon/water chestnut "wraps" "Chex" mix Veggie tray Fruit plate Chocolate chip cookies
  20. K-Toos are gluten-free, dairy-free, egg-free "Oreo" style cookies made by Kinnikinnick. They're REALLY good! You can find them in some stores or at Open Original Shared Link .
  21. Looks like you've gotten plenty of pancake suggestions, so I'll address the French Toast dilemma. If you buy a loaf of Ener-G Foods Light Tapioca Bread you (or Grandma) can make delicious French Toast using the same recipe as "normal". My gluten eating kids actually prefer it to "regular".
  22. Oops, I forgot to mention that I sprayed the pie pan with non-stick spray. My crust was pretty frozen too, but I could cut it with a butter knife and then it came up pretty well. I'm glad she liked it!
  23. My son is a red-head and is gluten intolerant, but not officially Celiac. When he was a baby, the pediatrician told me that red-heads have a higher incidence of food and environmental allergies and to be watchful.
  24. Jerry - I hope you get a positive test result. It seems that you need it for your peace of mind. But what happens if you are like many of us here and don't have Celiac Disease, "just" gluten intolerance. You've already proved to yourself that gluten-free is immensely helpful, so will you go back to gluten if you are among the ranks of the non-Celiac gluten...
