Hi Judy! The cookies and sorbet both have soy lecithin in them. I'm very sensitive to soy, but the lecithin doesn't bother me at all. I know it does some people though. (The Food Allergy and Anaphalaxis Network says that soy lecithin is safe even for people with severe soy allergies.) -

Yum - pineapple jello. I think coconut would be a great addition. I make jello out of "Sir Strawberry" or cherry juice from Trader Joe's. I heat part of the juice first, then add cold. You can make all kinds of jello salads with this - our favorite is strawberry with banana slices, frozen strawberries and chopped walnuts. -

Sorry to break in on this thread, but I can't believe you had this problem. My dad had the same thing, but with both his eyes for the last several years of his life. He had to open his eye lids with his fingers. I'd never heard of anyone else having this. My husband (then boyfriend) only met my dad once before he died and that's what he remembers about...

Ursa gave you good advice. I get joint pain almost immediately after eating dairy or soy - and I've heard from others that it's not uncommon. Check out the information that Ursa suggested and maybe you'll discover something. It's really common for Celiacs to have other food intolerances that show up AFTER going gluten-free. -

I just had to share a funny turn of events. I teach PE and health at a small Christian K-8 school. Nephrotic Syndrome is a different kind of kidney disease than what you have. No way! The first sign that I had that something was wrong with me was pain in my feet and the feeling that I had no padding. It's gone now (almost 11 years after eliminating wheat and being extremely gluten "light"), but I still remember that awful feeling. I had to wear aqua socks in the shower for a long time because I couldn't stand barefoot. -
