Welcome to the board! For the bread. I suppose I'd use a nut milk for when a recipe calls for milk, and one of various egg replacements in place of hen eggs. Sometimes the eggs can be replaced by mashed banana. Other times applesauce, and still others with some ground flax. It just depends on the recipe, and your preferences too. Like many here, you've found the diet to be helpful, and tests come back negative. It is all too common. Doctors are not well informed enough at all, and tests are inadequate to detect Celiac positively. The way I see it, does it matter what the tests say? I haven't even bothered to get tested, as I won't eat gluten just because some test says my system can...

I believe the undigested food is because of the intestinal damage. Certain things are more difficult to break down, so if the gut isn't up to the challenge, the food won't be fully digested. From my experience, it can take quite a while for the gut to heal enough to handle foods like it should. I'm still nursing mine after nearly three years gluten-free... -

Are you looking for hot cereals or cold cereals? I'm gonna guess you mean cold. For cold ones, I like puffed rice and puffed millet, and there are some nice amaranth ones too. I generally don't eat them though, but I'm sure others will have plenty of recommendations for you. -

It sounds similar to what I get sometimes. I believe it is the beginnings of a DH breakout. The rash you describe does sound like DH too - very much like what I also get on occasion. I find that too much salt and/or proteins can make it occur. A magnesium supplement seems to help. I'm sure others will chime in with their thoughts. -

Well, considering how much better you feel on the gluten-free diet, does it really make a difference what the tests say? Many get negative test results even when the diet helps immensely. The diet is after all the best diagnostic tool we have. From what you describe, I think the chances that you are at least gluten intolerant is very high. Consider yourself... -
That's true to an extent, though I would think it better for maintenance than for treatment. The reason it helps is because it contains caprylic acid. To address a yeast problem, I used caprylic acid capsules, which worked very well. I'm guessing the capricin is a similar product to what I had used (not sure of the brand name ATM). I haven't looked, so I don't have a direct answer to your question. However, I do take a powdered magnesium. So if it's the mineral you need, that's another way to get it. -

Yes, many here including myself have simply tried the gluten-free diet, found that it works, and stuck with it. Truly, the diet is the best diagnostic tool to determine if it will help you. I don't know. I recently saw a post which mentioned acne in relation to Celiac, and if I recall, it had cleared after going gluten-free. However, I wouldn't doubt the possibility of toxins or some other stuff like candida to cause skin problems like you describe. Sounds like what I get once in awhile, though not usually on my face. I think it may be the beginnings of a DH breakout, so whenever it occurs, I avoid salt and high protein foods. It usually subsides within a few days. I hope you've made certain that your skin and hair care products are gluten-free. -

I was already not consuming meat when I went gluten-free, so I didn't notice any additional challenge. To me it is simply an exchange of one grain for many, so I gained more than I gave up. I hope this point of view is helpful.

Yeah, I believe that's correct. I've read that wheat originally didn't grow in many areas where it does now, and that it is the hybrids which made it possible.

It seems there's a disease strain which is devastating wheat crops, and is now spreading through Africa. I'm not sure whether it's a good thing or a bad thing. After all, wouldn't it be interesting if the original varieties of wheat, before all the hybridization efforts of man, turn out to be the only ones able to survive? Here are some articles on it...

Well, for some time I had been eating sourdough bread. But the symptoms I got after each time I ate it is just one of the things that led me to find out it was the wheat which had been causing so many of my health issues. As for the method used to ferment it, I don't know. I'll never tough wheat again anyway. -
Well, there's also guar gum, which is actually a fiber. Not only can you add it to juices, smoothies, milk shakes, etc, but of course it works in baking the way xanthan gum does.

I can relate to the digestion issue you describe. One thing I found to be helpful is a magnesium supplement in powdered form. That way there's no solid pill, and the magnesium can get absorbed much more effectively. From what I've read, magnesium assists in the digestive process, and my experience tells me it really does work. Welcome to the board too... -

Not that I'm aware of, though a salty food might taste saltier with MSG in it. As I understand it, MSG tends to amplify the tastes/flavors which it accompanies. -

I'd have to guess the reason they don't answer the question directly is because there may be some natural occurring free glutamic acid within the product. If they say there isn't and you did a chemical analysis to prove there was, it could easily get them into legal trouble. So I wouldn't expect them to give an absolute answer. Two things in particular have helped me greatly with nerve function and such. A sublingual methylcobalamin supplement (vitamin B12), and a magnesium supplement. I recommend them most highly.

Well, to substitute soy flour, you might try garbanzo bean flour. Not sure what to sub for rice flour though. You might have to use more than one to replace it. Sorghum flour along with something else may work, but not having to sub our rice I haven't tried. There are a number of ways to replace eggs in a recipe. There have been more than a few posts on that...
