I'm not too particular about the brand of lentils, but up to now I've only seen one. They are Arrowhead Mills. For corn anything, I look for organic, as corn seems to give me a bit of an allergic reaction if it's not organic. I've concluded it might be a GMO issue, but so far popping corn doesn't bother me. -

Well. I don't think you're paranoid or being too careful. If you don't know they washed their hands, then you do need to at the very least ask to make sure. About the hand cream; plain coconut oil is a great skin cream, and of course it's totally gluten-free. I'd have separate towels, containers, spices, etc. I'd be too worried about CC to share spices... -

I have found most supplements by Source Naturals and NOW Foods are labeled nicely, including whether they are gluten-free. Freeda brand also has gluten-free supplements. All these companies have web sites where you can look up their products. -

Besides gluten, I know a lot of people get headaches and migraines from MSG. That stuff is hidden in all sorts of prepackaged items. Here's some good info on the subject: Open Original Shared Link. I think sugar can also contribute to problems like what you describe. Intestinal yeast overgrowth (candida) can be a real nasty one. -

For energy, besides grains there are also beans, which are a great source of proteins and many other nutrients. Lentils cook fast, and can work for a lot of different tasty dishes. Sweet potatoes are a good carb source. Tapioca pudding is practically all carbohydrate unless you add other stuff to it. Sweetened with fruit, it can be really delicious (at least... -
If I was going to make a flour tortilla, I suppose I might take a look at gluten-free noodle/pasta recipes, and also crepe recipes. Then just try a few things and see what works. If all else fails, maybe some lasagna noodles would work?

I'm wondering if there might be hidden gluten in something you're coming in contact with or ingesting. I'd suggest avoiding all dairy, nuts, and chocolate. If you cannot eat rice, perhaps millet, buckwheat, quinoa, teff, etc. will work for you. Besides making meals out of these, the flours can be used to make various breads and such. If corn isn't a problem... -
Isn't a tortilla traditionally made with corn meal? If your child cannot have corn, then I suppose I might try using something with a similar texture. One of those hot rice cereals comes to mind. I've used hot cereals to make muffins, and it works well. Other than that, seems to me just about any flour could work depending on personal preference. Rice...

I agree that Stevia deserves respect, and has received quite the opposite from the FDA. From what I've read, there are some very rotten things going on within the FDA. As for the brands of Stevia, I researched it before purchasing any, and came to the conclusion that the Stevita brand was the one to get. I think it's good, but not having a sweet tooth... -

Well, the soup has milk, and from your description the chocolate bar does too. What about too much dairy? Does the bar have caramel coloring? I don't see anything too suspect of containing MSG on the soup, but what about the chocolate bar? Other than that, what about your can opener? Might it had been used on something containing gluten? -

I'd like to point out that there isn't anything "fake" about gluten-free breads and such. They're simply not made with wheat. It is true though that most of the prepackaged stuff leaves something to be desired. Do try some homemade breads though. The consensus seems to be that homemade beats all. So please try baking some before your family becomes dead... -

Well, trace amounts will inevitably go astray as other members of your family use wheat products. So if your sensitivity is high enough such that you become ill from it, then I'd say it is not you who should feel guilty. They must become more conscientious IMHO, or you don't have much choice. I don't know what brand of gluten-free waffles are the preferred...

If the mix you're using is the one called "Ultimate Baking & Pancake Mix", I'm guessing it's the almond meal which you taste. That's a common ingredient in many gluten-free bead recipes. It does help to obtain better texture, but it may not always be needed, depending on what you're making. I suppose my two suggestions might be to use a different mix... -

From what many say, it seems the best breads are homemade. I have used millet flour in breads too, and it works well. So it's obviously not the flour which is the problem. I'm wondering if the white rice flour you are finding is in fact sweet white rice flour. The reason is that the sweet variety is popular in Asian desserts/cooking. You could probably substitute the rice flour with something else, depending on the recipe. Sorghum or millet flour come to mind, but it seems to me if your local shops don't at least carry rice... -

I suppose the ripeness of the bananas could effect the moisture, as will baking time/temp. Did you use a recipe from Arrowhead Mills? Did you sub any ingredients? There is a banana bread recipe on containers of Rumford baking powder too. -

For the dairy, I've found nut milks are tremendously delicious. I really like them, and the nice part is they are easy to make, so you don't have to buy them. There are other sorts of milk too, such as rice, soy, etc. Dairy free cheeses are available, so check your local health food stores. Oh boy, can I relate to this... I too have been constantly hungry, even after literally stuffing myself to the point where I feel I'm going to puke. However, more recently the hunger has lessened a bit. I attribute this to a magnesium supplement which I've been taking for about the same amount of time. Well, what matters to me is that the gluten-free diet has made such an enormous difference, I could care less what tests there are, or what results they'd give. To me it's the diet which is proof positive.
