ARCHIVED 3 Year Old Has Identity Crisis
RiceGuy replied to shan's topic in Parents, Friends and Loved Ones of Celiacs
I don't know if this will work, but suppose you make the challah, but don't tell her it's gluten-free. Everyone eats, and you offer it to her. No matter how it compares to the gluten-filled stuff, she'll already be convinced in her own mind that it's better than the gluten-free one. But, everyone is going to have to either put on a "poker face", or you leave... -
ARCHIVED Can I Bake Gluten Free? Advice Needed
RiceGuy replied to Weddingcakes's topic in Gluten-Free Recipes & Cooking Tips
I agree that at least some dedicated equipment will be helpful, but it will be necessary for certain things. For instance, a flour sifter. I suppose, that depending on the beaters of your mixer, that you may need to get a second set, if not a separate mixer. Stainless steel mixing bowls are best. If you use plastic, then I'd think you'll need a second... -
ARCHIVED 2 Year Old Who Stopped Eating All Foods
RiceGuy replied to Jules's topic in Parents, Friends and Loved Ones of Celiacs
A diminished sense of taste is a sign of zinc deficiency. However, it could be something else which is causing her to not want to eat. I'd have to agree that one possibility could be that she's frightened that she'll be ill from eating. At age two, she should be talking. Does she, and can she give some insight into the matter? She should also be able to... -
ARCHIVED Restless Leg Prescription - Generic
RiceGuy replied to debmidge's topic in Gluten-Free Foods, Products, Shopping & Medications
According to Open Original Shared Link, nutrient deficiencies in iron, magnesium, B12, folate, and/or a few others are associated with RLS. -
Yeah, that's the first one I thought of...well, after coconut that is But I didn't bother mentioning any just because Judyin Philly asked about more widely available and less costly oils. I tried two different brands of macadamia nut oil - MacNut, and NOW Foods. The first was divine, the second tasted sorta burnt/roasted. Too bad the cost is so sky...

ARCHIVED From The Gig Thread
RiceGuy replied to gfp's topic in Gluten-Free Foods, Products, Shopping & Medications
That's a good idea IMO, and I don't see it costing any extra at all. Why? Because if the company is in compliance with the law (or even whatever their own labels currently state), then they are testing, and can simply replace the gluten-free statement with the actual PPM which they must already know. It would also create better competition in the gluten... -
I'd have to guess olive oil would add an undesirable taste. At least the good kind would, but olive oil isn't recommended for cooking, as it can't take the heat.

I agree that Asians haven't traditionally gorged themselves on soy. But a quick Google search shows that the very same article you referenced has been circulated all over the place. Science works best with independent confirmation. I'm not saying it's wrong or right, but it's a little like those email chain letters that we all seem to get. Speaking of...

I don't have any personal experience with homeopathy, and I'm not convinced from what I've heard and read. That doesn't mean it's quackery, but I can understand your hesitation. I think, based on what I know, and given the fact that sensitivity to gluten often increases on a gluten-free diet, that homeopathy basically does something along those lines. That...

ARCHIVED For Those Who Are Soy Free
RiceGuy replied to MyMississippi's topic in Food Intolerance & Leaky Gut
Many who can't eat whole soy have found soy lecithin to be well tolerated. It is generally fairly pure, but obviously you'll need to determine how you do with it for yourself. A number of nutrient deficiencies have been linked to neurological problems, so you many want to try some of the more likely ones. For instance, a methylcobalamin (vitamin B12) supplement... -
Well, I haven't read every post, but I have previously done some research on soy. What I found is that many claims on BOTH sides are simply exaggerated or false. Others are misinterpretations, or the author has jumped to conclusions. Basically, there's confusion on both sides. The main thing I found to be bad about soy is that it contains Open Original...

ARCHIVED Would You Suspect Celiac? Poop Urgency But Only Sometimes..
RiceGuy replied to crunchy-mama's topic in Parents, Friends and Loved Ones of Celiacs
Oh my! Please get your child on a gluten-free, dairy-free diet! You are NOT imagining things. You are NOT making things up or exaggerating. He has a number of very obvious signs that certain foods are a problem. The best way to tell is the diet. As for an "official" diagnosis, the tests results are often falsely negative for children that young, and the... -
ARCHIVED Sleep Number Bed = Toxic Mold
RiceGuy replied to CarlaB's topic in Related Issues & Disorders
Great. Just what we need - more chemicals! So, let me get this straight; there's some sort of non-porous cover over the plastic inflatable part, and the mold is in between? -
ARCHIVED Sleep Number Bed = Toxic Mold
RiceGuy replied to CarlaB's topic in Related Issues & Disorders
Maybe it's on purpose, to simulate what it's like to sleep in the gutter? Or, for couples that don't exactly get along, it sorta keeps them from separating long enough to work things out But yeah, mold is so gross. I'm surprised the whole thing didn't smell bad enough to give itself away. -
ARCHIVED Calcium And Magnesium Supplements
RiceGuy replied to Genie75's topic in Coping with Celiac Disease
As yolo mentioned, Open Original Shared Link makes powdered magnesium and calcium, in both citrate and carbonate forms. These will blend into drinks pretty easily, thought the carbonate forms are more neutral in taste. The citrate forms will add a citrus sort of taste - sorta lemony. These powders have no other ingredients too, so hopefully you won't have... -
Thanks for listing those spices. I had seen a recipe at one time, similar to what you've given. I remember being surprised to see cinnamon as an ingredient. Never tried it for savory, only for sweet stuff like muffins, cookies, pies, etc. Can you describe what it does for the curry powder flavor-wise? Same for the cloves. I'm honestly having a bit of trouble...

ARCHIVED From The Gig Thread
RiceGuy replied to gfp's topic in Gluten-Free Foods, Products, Shopping & Medications
I agree with what you're saying. Recently, I heard that some baseball games were prohibiting peanuts, just to help those whom are allergic to peanuts to go enjoy the games. I'm sure I don't have to detail what my first thought was, but obviously, they wouldn't have done that if they didn't think there was a market for it. Awareness within a given industry... -
Black pepper is not a nightshade. There are a number of spices which will help get the flavor you seek. If you want the taste of curry powder, you can look up your favorite brand to see what spices they put in it, and just leave out the nightshades. Add black pepper instead of red pepper and paprika, etc. I suppose mustard seed might give certain dishes a...

Actually, it has been found that being dairy-free does NOT necessarily leave you deficient in calcium. One of the reasons is that the proteins in milk are difficult to digest, and the gut basically ends up using a lot of calcium to deal with them. Up to three times the calcium is lost in the digestion of animal proteins than for plant proteins. There are...

ARCHIVED Newbie..need Help With Bread Please
RiceGuy replied to Mandy2's topic in Gluten-Free Foods, Products, Shopping & Medications
I agree, the best gluten-free breads are those you make yourself. As you try different ones, be they ready-made, mixes, or from scratch, you might end up with stuff which nobody wants to eat. If that happens, you can toast it and make gluten-free bread crumbs for meatloaf, stuffing, etc. It may also work for French toast, mini pizzas, grilled cheese sandwiches... -
ARCHIVED Overeating Causes Problems?
RiceGuy replied to cookiequeen's topic in Related Issues & Disorders
For over a year, I had a completely ravenous appetite. There was no amount of food that would satisfy, and I'd eat until my poor stomach simply couldn't hold any more. Thankfully, it did eventually get better, which I mostly attribute to supplements. -
ARCHIVED Do Sensitivity Levels Go Down?
RiceGuy replied to dilettantesteph's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
From the many posts on the topic, I'd say most people have a greater sensitivity to gluten as time goes by on the gluten-free diet, such that less and less can cause the same or worse symptoms. But, as long as you don't ingest gluten, you can look forward to better health as the body heals. -
In my experience, avoiding nightshades made a huge difference. I haven't tried them since, so I don't know if they'll still cripple me like they were doing.
-
I also had a ravenous appetite at first, and simply could not cram enough food into my stomach to quench the hunger. I believe this was due to malabsorption, which thankfully has greatly improved. One thing I found along the way, was that proteins weren't being digested properly. Cutting back on high protein foods helped quite a lot, especially to reduce...

ARCHIVED New Doctor
RiceGuy replied to holdthegluten's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I have not heard of it, but looking it up, it appears to contain a number of things which should help get rid of a candida overgrowth. Another product is Open Original Shared Link, which also has stuff known to work. I do not know which product is more effective, but I do know that caprylic acid does work well. Both products have caprylic acid, but at different...
