Thing is, using a different mix doesn't rule out CC. Now if you make some of your own mix, using separate ingredients to duplicate one of the suspect products, but leave out the guar gum in one batch and include it in another, then you'll have everything identical except the binding agent. When asking about a fiber supplement, I'm guessing you mean insoluble, as in a laxative? The recommended daily intake of fiber is about 25-30 grams, though I'm sure some of us need more. Well, it sounds like there may be hidden gluten and/or other intolerances. Have you tried avoiding dairy? This very common for a Celiac, especially when the damage to the intestine has continued for so long. Consider other things too, like soy, corn, eggs, tree nuts, peanuts, and nightshades. I see a few things I'd suspect if it were me. First, one mix has honey, which I've heard can have gluten. Then there's the yeast. Also, corn products and corn starch aren't necessarily equally safe. Some corn is organic, others are GMO, which I know I react to. I'm not entirely convinced that it need be a common ingredient, but I agree it's a good place... -

The fist thing that comes to mind is MSG. Another poster mentioned aspartame, which does basically the same for those sensitive to Free Glutamic Acid. Well, guar gum is a soluble fiber, which from what I've read is expected to have the opposite effect than that of insoluble fiber, often used in laxatives. But if for whatever reason it doesn't agree with your system, there may be a few alternatives you can try. 	I looked into grain mills, but the grains I like turn out to be more expensive than the flours unless I buy a ton of them. I stopped using rice flours once I tried buckwheat, millet, sorghum, bean flours, etc. None of these are grainy at all to me. In fact I hadn't noticed how grainy the rice flours were until I tried them again after using the others...

The first thing that comes to mind is chocolate pudding. I'm thinking, that you could use plain unsweetened cocoa powder, pure Stevia powder, and guar gum. I've done this with carob, and the guar gum does give a very smooth pudding consistency. I used water for the liquid, but I suppose rice/nut/soy milk could work too. I can't help you with the stickiness, and I always make my stuff from scratch so I haven't any idea if the mix is supposed to be that way. However, I have made something like donuts, though it was completely accidental. I baked them in the oven, and they turned out really yummy IMO. So that's what I'd suggest doing - baked rather than fried. -

I believe your symptoms make it very clear. Though it's my opinion, I'd put money on you having Celiac. Besides all your symptoms being very indicative, the fact that one of the tests showed mono is an important one. Without getting into too much of the details, mono is caused by the adenovirus, and it just so happens that part of the gluten protein sequence... -

Both NOW and Source Naturals have a policy of labeling there stuff with a "free from" list. It's nice to see gluten-free, sugar-free, dairy-free, soy-free, etc. Also, NOW Foods customer support is about the fastest I've ever seen. I've actually gotten answers back in like 20 minutes. -

No, you can't get addicted to digestive enzyme supplements, nor vitamin or mineral supplements. Check what kind of B12 is in the multi you take. Chances are, it will be cyanocobalamin, which is actually made by attaching a molecule of cyanide to the vitamin B12. I'd recommend only the methylcobalamin type, as it doesn't require the conversion by the liver... -

There is often an increase in sensitivity and allergic reactions after beginning the gluten-free diet. However, if you haven't already done so, check for hidden gluten, such as those found on the unsafe food list. One other thing to watch out for is candida (intestinal yeast infection).
