I'm not a parent, but I just came across a cracker recipe, so I'll respond anyway In terms of your son's diet consisting of dairy, pasta, crackers and fruit, you should be in pretty good shape for a transition. He can still have dairy, Tinkyada pasta is truly just as good as "normal" pasta, he can still have fruit....that just leaves crackers. Open... -

For a soy-free version I leave out the tamari, or sometimes just mix seasame oil with plum vingegar...

Arrowhead Mills makes a berry-free rice flake cereal. It is lightly sweetened, but I doubt it's much sweeter than Special K (which contains sweetner in the form of high fructose corn syrup). -

Just to re-emphasize what others have said, make sure you toast all gluten-free bread. Somehow the heating up process transforms the bread from dry/crumbly/yucky to pretty edible and not all that bad. Glutino Cinnamon Raison bread is pretty good toasted. Whole Foods usually carries it.... -
I don't think that's as much of an issue if the raw milk comes from organic grass-fed cows (but I might not know what I'm talking aboutt ) Raw milk also contains amylase, catalase, lactoperoxidase, lipase and phosphatase (according to www.raw-milk-facts.com) Sorry to go off topic. I just find this subject interesting for some reason....

If you can have soy, I believe there's soemthing called Vegan Slices (or Soymage maybe?) You can try chreese (www.chreese.com) Or... You can try to make raw vegan cheese with cashews (I don't have a recipe on hand but I know there are some on this board) -
If you eat whole, natural foods like the ones you listed, you will actually be getting more nutrition (though I would recommend fresh veggies if possible). It is safe and it is how human beings are actually meant to eat. Pasteurized, processed dairy does not provide the kind of nutrition people think it does. Here is one article with some info: Open...

Hi - If it were me I would use 1/2 cup all purpose gluten-free flour instead. Bob's Red Mill is one option that will likely work. Generally, when I bake (b/c I'm not a real expert at baking) I just substitute all-purpose gluten-free flour for all-purpose regular flour at a ratio of 1:1. I use coconut oil instead of butter in a lot of things. Organic virgin coconut oil is the best, and it's very healthy. For milk I use hemp milk or rice milk. Almond milk is good too. Can't help you much with cheese, but once in a while I have Mac and Chreese from Roads Ends Organics and I actually like it a lot (www.chreese.com) I should tell you...

Sometimes for breakfast I mix a scoop of the chocolate powder with rice milk (I just shake it up in a nalgene bottle). I think it tastes really good actually. -

No, trying the gluten-free diet cannot hurt you. I believe there are hundreds of symptoms associated with celiac disease. The symptoms can vary greatly from person to person.
