Yes, there are conditions other than celiac that can cause gluten sensitivity. It is also possible to have non-celiac gluten intolerance. Here's an explanation by Danna Korn that might help: -

Just bring plenty of cereal and gerber wheels and Energ bread with cheese to the airport and hopefully everything will go well. I know it's hard to travel with a toddler, but bringing 6 hours worth of food into an airport is easy...I'm sure you'll be fine -

You should really bring a cooler filled with foods he normally eats. I might be misunderstanding but do you have a 6 hour drive after the flight? If there are grocery or health food stores along the way, it would be safer to stop at those rather than fast food places. That way you can get new ice (or bags of frozen fruit) to keep your cooler cold as well... -

If you go to the home page of celiac.com and search for "oats" you'll find extensive information on the subject. Many studies suggest they are safe. It's worth looking over the info. before deciding for yourself. You can get certified gluten-free oats if you're worried about contamination. -
Does anyone else bake with coconut flour? The coconut banana muffins I made yesterday (recipe below) turned out really well, so...I'd like to make more stuff with it Does anyone have any recipes? Well I'm no help but I'm confused about spell check as well. On my computer at work the spell checker is there and on my computer at home it never has been. Strange... Edit: I should clarify that I'm talking about the spell checker that's part of this actual website. I think it's a new feature.

I've heard that it's common to feel suddnely worse about 6 weeks in, as that's when your body might start to really detox. Cutting out dairy is a good suggestion though. -

I've heard of canola presenting some sort of cross reactivity issue, but I think that's a pretty outdated belief. Millet and buckwheat are fine (buckwheat isn't even a grain), unless of course you react to them for another reason. I honestly am starting to think this whole gluten-free thing is made to sound a whole heck of a lot more complicated than it... -
There's a big difference between natural corn and the processed substances known as maltodextrin and caramel coloring, even if those substances were derived from corn originally. I believe maltodextrin an also be derived from potatoes, but if those additives bother you, your symptoms might not have anything to do with the original sources they came from...

In a way a full time job provides a lot of flexibility, because you get paid time-off and benefits. If you're not required to make a long-term comittment to the full-time option, I would definitely consider it. You can always go back to part-time when you have kids... -
The best thing to do is drink LOTS of water before and during the flight. The one time I did that I hardly experienced any jet lag at all.

I don't know if this helps but here's a recipe for enchilada sauce. It's pretty basic stuff when you take out all the scary ingredients and the wheat gluten.
