  1. It sounds like you didn't eat enough and that could be causing your symptoms. I would be really shaky and sick if that's all I ate in a day. Your pork salad sounds good. That might make you feel better. You probably need to get some more protein in your diet if your stomach can handle it. If you eat some protein earlier in the day it might help...

  3. A lot of ppl with gluten sensitivity think they can eat that E... bread. It's a common misconception. It is true that for people without celiac or gluten sensitivity, the sprouted bread is much easier to digest.

  10. I think the Veggie Shreds and Rice slices contain casein so be careful with those. The Vegan ones are safe.

I read that organic baby carrots are sometimes soaked in a chemical bath, but I'm talking about whole organic unpackaged fruits and veggies.   13. But did you eat dairy or gluten yesterday, or the day before, or the day before that? If so, and if you weren't feeling great today, the dairy or gluten could still be contributing to the problem. It sometimes takes me several days to react to dairy or gluten (just trying to throw out some possibilities).

  16. The main difference between celiac disease and gluten intolerance is it is possible to have gluten intolerance that will never result in flattened villi. It's also possible to have gluten intolerance that will eventually result in that, in which case you would then be considered to have celiac disease.   17. Hang in there. Based on your symptoms, you could very well have a gluten intolerance. Your doctor was right to suggest that.   18. I agree, the cashew ranch dresing is the best. I've put it on everything. It's even great on Tinkyada - makes a great gluten-free/CF creamy pasta. Don't give up Dragonqueen!!!!! Eating gluten again is not worth it!

  20. Wow thanks for the explantion Rachel. That's really helpful to know. I'd like to think I could at least kind of trust the companies that process "organic" food. I guess once it's processed you just never really know what you're eating.
  21. My main soy symptom involves the swelling of my throat. It's kinda freaky. I also get all the GI problems from soy, almost as bad as gluten, but not quite - mainly in the sense that I can handle tiny amounts in chocolate and what not. But I can only handle the tiny amounts if I'm really good about cutting out all of the obvious sources.
  22. Veggies and fruits are carbs. I don't know if you specifically need starchy carbs for the hypo thing though.
  23. Hydrolized Vegetable Protein can be gluten, but not always. Anything hydrogenated or hydrolized isn't especially good for you though. You should check out the lists of safe and forbidden ingredients on celiac.com. That might help you out.
