I have never cared about food my whole life, basically just ate to live (EXCEPT always loved bistro dining and great food when anyone else prepared it ) - been gluten-free about 2 months - suddenly I'm dreaming of food nearly every night, and it's always things like brownies, cookies, fluffy desserts, hamburgers, all gluten-containing items. I never eat...
  3. This is good news, my best friend lives in San Jose and that sounds like a place we can go. I lived in the Carmel area for seven years, wish I'd known about that! (Wish I'd known about celiac disease also, back then.....could have changed many things)! Thanks for the info! Susan
  4. Robbin, I am lactose-intolerant....don't really know anything about casein at this point - is it not derived from milk? Just eliminated dairy recently with great success in the stomach area....not bloated and painful as before. So sorry about your rice....maybe I"ll try the lactaid and see what happens - - - look out, I feel a binge coming on....
  5. This is good news.....I don't care about nutrition if I'm going to make my mom's choc. chip cookies.....just some semblance of that heavenly morsel would be fabulous..... I bought some sweet rice flour from Trader Joe's - will that work? Thanks - susan
  6. Had to ban myself from Kozy Shack, it's not allowed in the house.....my favorite binge food after going gluten-free, but then, had to give up dairy...I could put away a 6-pack of the stuff in no time...sniff....
  7. I was startled to learn, as I had never heard of Celiac, that I had literally NO villi left at all, intestine was completely flattened.....which explained complete malmutrition and chronically not being able to keep weight on......
  8. I second the request, I LOVE rice pudding and was eating tons of it until last week, when I had to give up dairy.... A good recipe with rice or soy milk would be great!!
  9. That is good to know....I am very scared to attempt any baking. I just look at my new flours and just close the cupboard and walk away. Kind of a waste of money, I had better look into this....

  11. Paula, you have no idea. That is just what I wanted to hear, your "issues" sound a lot like mine, esp. the psychological ones. (except what's weird is that my stomach hurts more now AFTER going gluten-free - PLUS I've gained 15 pounds that I"d like to lose part of).   15. Some of us were just writing in another thread that we'd LOVE to hear from old-time celiacs, who've had it for years, I guess? - to write and tell us that this really all does get better. And tell us, perhaps, how LONG it might take to stabilize....that the torture of going gluten-free (and in some cases giving up so much more than gluten, even) really...

  20. Do you feel the C-Diff triggered your Celiac? I was worried about getting thrush but took plenty of probiotics...I think it helped.   21. Oh dear.....I believe you just stopped taking antibiotics a day or two ago? They are really savage and very strong.....I am so sorry you don't feel cured, but *maybe* a few more days without those drugs will help.....praying that you'll feel better just being off that. I remember it WAS an awful two weeks on that drug! I felt even sicker and yes, depressed...
  22. DingoGirl - do you make yourself gluten free pasta? If so, did you toss out your old colander? It's impossible to get all of the residue out of those little holes.
