About all you can say at this point is that the esophagus looks normal but the stomach and upper part of the small bowel don't look happy. The microscopic report on the status of the villi that line the small bowel is pending, which is the critical factor when diagnosing celiac disease.

Welcome to the forum, joaugust! Have you been diagnosed with celiac disease and if so, how long ago. The jelly-like substance you passed could be undigested fat or it could be the small bowel lining, I'm thinking.

Is butter made from grain? Eileen, we can't answer every specific food question you have. Get an understanding of what gluten is and the terminology used to disguise it. You need to do your own research. Googling those things is easy. Read labels. -

My bad. Actually, it's about 5g per slice. One piece of bread weighs about 25g. You can actually buy pure gluten in health food stores. Years ago, my wife used to add gluten power to the bread she baked to make it hold together better. One slice of wheat bread contains about 25 grams of gluten. Mayo Clinic recommends eating two slices of wheat bread (or the equivalent) daily for 6-8 weeks leading up to the testing.

Could be another ingredient besides gluten that is causing the issue. Hummus is made from a legume and some people don't tolerate legumes well. Also, a lot of protein/energy bars use sugar alcohols for sweetener and chicory for fiber, things that are famous for causing many people gas and bloating. I'm one of them.

As Wheatwacked suggested, you may have NCGS instead of Celiac Disease. NCGS is 10x more common than celiac disease and shares many of the same symptoms.
