  1. Not meatloaf, but it would work if you bake it like a meatloaf. It's similar. Turkey Meatballs: 3/4 lb ground turkey 3 turkey italian sausages, remove casing 3T pesto 1/2 log (4 oz) cooked polenta, crumbled 1 egg pepper The pesto sauce I use doesn't have cheese in it.
  2. Honestly- you just do the best you can. I usually only have one week of bad symptoms, and a second week of feeling kind of blah. I try as hard as I can to get exercise- and by that, I mean walking 5-6 blocks, since I'm so fatigued. Every little bit helps. Then again, it's ok to just take two sick days and sleep the whole time. I've learned not to beat myself...
  3. You're totally right on that point. I'm just saying that chocolate isn't as bad as everyone seems to think, because people equate it with candy/sugar/junk, and that a lot of the time portion control is a big issue in weight-loss diets.
  4. Oh, I didn't realize scleroderma was in this test. Sweet! I guess that's negative too, which is good. My gran had that, and I seem to get a ton of her health problems... then again, she stopped her gluten-free diet after a while.
  5. People think they can't have chocolate on a diet, but that's not the case. I've been on a diet for the last six weeks, and I've lost five lbs, and I still eat chocolate. What makes a difference is the type of chocolate and the amount. If I get the Ghirardelli dark chocolate chips, they are 5 calories each. (They are larger chips.) I can have as many or as...
  6. Is this something that has been approved by the FDA? I just did a google search and couldn't find that. Who actually approved what?
  7. Yes- I just made cookies using TJ's almond butter. Yum... their almond butter is only about $5. In most stores it costs $9 - $10.
  8. Yeah, I've tried to explain to people that when it comes to many gluten-free brownies, they compensate for the "gluten free taste" with MORE chocolate. Therefore, they are better.
  9. I wouldn't bother with more than one day's worth of fruit. It may get confiscated and it doesn't travel well.
  10. I am totally addicted to TJ's gluten free pancakes. They are in the freezer section. Both stores have gluten-free beef jerky.
  11. I got a grill pan from Calophon. (Not sure of spelling.) I just grill up a whole package of chicken breasts, slice them up, and keep the meat in a tupperware. I have a ton of different sauces in my fridge- some pre-made, some that I made myself. I just pick a different one and add it to the chicken. (or beef, or whatever) I also buy chopped vegies in...
  12. I thought the gluten challenge lasted 3 months, and involved eating the equivalent of 4 slices of bread per day. I tried going back on gluten for just one week when I first started the diet so I could take some tests, and I was a mess. I slept 16 hours per day that week. Most of my tests were negative because I didn't do the challenge correctly. I recently...
  13. I'm on a plan of about 1600 right now. One thing that I do is I eat big bowls of cooked vegies. They really fill me up. Also, chicken and tuna are about half the calories of beef and salmon. That helps. Basically, pad every meal with a big bowl of cooked vegies, like stir-fry, and you'll feel full. (Too much raw stuff gives me gas.) Can you eat fruit...
  14. Alton Brown has gluten-free recipes? How did I not know this? Was there a whole episode?
  15. Wow. Today I went through a huge box of clothes at my dad's house. They were almost all from college when I was 7-8 lbs lighter and running a lot. Some were from grad school, back when I was really skinny because of malabsorption. (Grad school was right before I started my diet.) I tried them on- I can't believe how baggy they all were! Those used to be...
  16. How often do you all take them? I started on Theralac last month, and I notice a difference, but the directions say to take just two per week after a while. I feel like I should take them more often now that I'm done with the start-up period.
  17. I went to a sleep clinic today. My allergies have gotten insane. I can't breathe. At any rate, they looked into my nose, and the doctor said, "Oh WOW. Your turbinates are totally blocked." I had to look up what these are: Open Original Shared Link She said they zap them with some kind of microwave or radio wave to bring the swelling down. I've never even...
  18. Oh, I know, but I've read that on other sites besides wikipedia. It's the reason why you can't give honey to babies. I just don't remember the specifics.
  19. I'm pretty sure I read that honey had a low glycemic index and that it acted as a prebiotic. I also read (on wikipedia I think) that it contains various toxins that get trapped. So is honey good or bad? And what conditions does it help/hurt? Any links would be appreciated.
  20. What is the link with corticosteroids and birth control? I recently stopped using the corticosteroid inhaler because it was causing problems for me, but that was only one symptom.
  21. Add to the list: Southeast Asia. Granted, there is always a small chance that you can get glutened in a tourist-centric restaurant, but the food in Thailand, Cambodia, and southern Vietnam is naturally gluten-free. The only thing you have to watch for is food with Chinese influences, i.e. soy sauce. Most people in the tourist areas speak decent English...
  22. I went on RC last summer. I had a really easy time in the main dining room. We had the same waiter every time. He brought us (my brother and I) gluten-free bread every meal. He also went and got us plain white rice from the crew dining room for breakfast one morning. The buffets- be careful, but there is still some stuff you can eat. The biggest issue...
  23. Bob's Red Mill mix is gross because all I can taste is ground beans. What's a good mix or recipe? Should I have bought the Pamela's mix?
  24. YES. This and acne. If I wake up with a big belly and get a lot of zits by the next evening, I know I've been glutened.
  25. This thread is really interesting to me. I have the same problem. Even when I've gone a while without getting glutened, I still have a big stomach by the end of the day. It's getting better, but it's not gone. Here's what I've done so far: 1. No gluten. (duh) 2. Digestive enzymes- I get really gassy when I eat certain raw vegies, and sometimes with gluten...
