  1. "First do no harm: Slogan used in medicine often in the Latin wording "primum non nocere," a fundamental medical precept of Hippocrates (ca. 460-ca. 377 B.C)." from www. MedicineNet.com "Wheat allergy occurs when there is an allergic reaction to gluten (the protein found in wheat, rye, barley and oats). What About SPELT? Spelt is an ancient grain...

    ARCHIVED Pho

I love pho, but I don't dare trust the restaurants for it--too many gluteny beef bases and soy sauces. It's practically a given that it WILL contain gluten. However, there is a great recipe for it in Gluten-Free for Dummies (she calls it "Faux Pho"), which I make all the time. I hate to say this, but it sounds like the biggest problem is not food,...
  3. Whether it is an allergy to wheat or a problem with gluten, either way, spelt isn't going to help--it IS a form of wheat. I must say, I do agree with Ursa. I think you are taking a terrible risk. Even mild seizures can cause brain damage. I am continually astounded at the number of doctors who ignore the their sworn mandate to "first do no harm....
  4. Try moving to Pittsburgh! Seriously. When I moved here from the West Coast, I felt like I needed a passport! We have a MUCH lower cost of living, a slower pace, no smog, less traffic, great universities, medical centers (including a celiac clinic!), world-class symphony orchestra, museums, schools, major sports, and three rivers! We don't have...
  5. If you were vomiting whole peas, that means that you never chewed them in the first place, which might be part of the problem. Also, if you have an intestinal virus, then it is perfectly normal to vomit undigested food, even after several hours. That's how the body rids itself of toxins in the upper digestive tract. GERD and constipation are very...
  6. The gluten-free breads, cakes, cookies, etc. are VERY difficult for gluten-damaged intestines to deal with. They are much heavier than gluteny breads. No, they don't contain the gluten that caused all the problems for us in the first place, but the damage takes months to heal. In the meantime, you will feel MUCH better if you don't sock your poor tummy...
  7. fluffernutter = marshmallow cream (the fluffer) and peanut butter (the nutter) = YUM
  8. I think the interpretation of that study is ridiculous. It's not a well-controlled study. "No protective effect of breast-feeding was observed," but they didn't track whether or not the mother was on a gluten-free diet at the time of breastfeeding, which means that the baby could have been exposed to gluten from the first day of life. I am starting...
  9. We had chicken fingers (I took chicken tenders, sprinkled seasoned salt on them, rolled them in gluten-free cornflake crumbs, sprayed with PAM, and baked at 400 degrees for 20 minutes) steamed broccoli (fresh from the farm market) and pineapple coconut rice (3 cups of minute rice, 1 cup pineapple juice, 1 can of coconut milk, 1 20-oz can of pineapple chunks...
  10. Why is he doing celiac bloodwork if you've been gluten-free for a month? You shouldn't BE producing antibodies against gluten if you're not being exposed to it. Or is he doing genetic testing???
  11. I've been making this for several months as our "daily bread," and I've adapted a few things that seem to work well. I double the recipe and make it in a glass 9" x 13" pan that I spray with PAM and dust with cornmeal. I use twice the amount of baking powder called for, and instead of the rice flour and potato starch, I use whatever rice flour mix I...
  12. Holy coincidences, Batman--look what I found: Open Original Shared Link
  13. What the doctors keep forgetting is that the damage doesn't HAVE to be in your intestine. There is a condition called dermatitis herpetiformis that is considered an automatic diagnosis of celiac. It is a skin rash. This means that the immune system is attacking the skin instead of the intestinal villi. It's not such a stretch to figure that the...
  14. Premade gluten-free bread tastes (to me) like styrofoam. HOME-made gluten-free bread tastes like really, really good artisan bakery bread Gluten-free cake (homemade) tastes better than gluteny homemade cake (cake mix OR scratch)! That was a huge surprise to me. Gluten-free pancakes and waffles taste the same to me as gluteny ones. Gluten...
  15. Biopsies are totally hit or miss. You have 22 feet of intestine, and they biopsy 4 to 6 (if you are lucky) quarter-inch (or less) sections. That leaves, um, 21.9 feet left that they haven't biopsied--and celiac damage is often patchy and not visible to the naked eye. Seems to me your doctor is being unusually intelligent in noticing that yes, gluten...
  16. I just use corn meal and add my own flavoring (seasoned salt, garlic, onion, parsely, dill, etc).
  17. You are totally correct about this. Unfortunately, multiple vaccines have caused irreversible damage to even healthy babies. Celiac babies are at far greater risk of vaccine-induced damage, since they already have leaky guts. I would say that her baby's health is the first priority--and that means no multiple vaccines. Note, I am not saying no vaccines...
  18. Hopefully, your little one is just fine, and will catch up when ready. But my son had similar issues, and they were red flags for Asperger's (a mild form of autism) (which we didn't know at the time). You might want to read up on it, and get her assessed if you think it's a possibility, as the earlier you get help, the better the outcome. You also...
  19. I just remembered--a year or two ago, there was a mom posting on here who had had her kids taken away and she was accused of Munchhausen's by proxy. She fought, and eventually regained custody of her baby, who did have celiac. You might try a search on this board of Munchausen's (not sure of the spelling, though).
  20. I tried to pm you last night, but my computer's been weird, so I don't know if it worked. Anyway, please consider eliminating all dairy from her diet, as well as yours if you are breastfeeding. If she has problems with gluten, her villi are likely damaged, and the villi are what produce lactase (which digests the lactose in milk). My rule for my underweight...
  21. Thanks so much for posting this!
  22. I had a very good experience at Qdoba. The manager there told me that his wife is Celiac, and told me exactly what to avoid (I ended up having a Naked Burrito, and it was delicious). He changed gloves, and made my meal on a clean board. As long as you steer clear of the gluteny ingredients, you should be okay.
  23. I now double the recipe and make it in a 9 x 13 pan, since my kids scarf it down so quickly.
  24. There is also the possibility that multiple outbreaks of shingles aren't shingles at all but (drum roll, please) misdiagnosed DH (dermatitis herpetiformis)--in other words, celiac.
  25. Darn it, I can't get your links to work! Do you have any others?
