  1. Here in the US , they only "recognize" two Celiac genes--but in Europe, I think they recognize 7 genes as being associated with celiac. Definitely something to keep in mind! I totally agree that sharp tummy pains are NOT normal. Something is causing them. My kids' occasional tummy pains disappeared on a gluten-lite diet (I was gluten-free, and didn...
  2. There is a grey area between celiac and gluten intolerance, and the doctors just haven't figure out everything yet, though they rarely admit it. For many people, gluten intolerance can simply be early-stage celiac. Some people (for example, those with DH, or dermatitis herpetiformis) HAVE celiac--but not necessarily damaged villi. So, even though doctors...
  3. Welcome aboard! It took many of us months to figure out this diet completely, Perhaps your son's diet still includes hidden gluten? Many cereals, soy sauces, deli tuna salads, ice creams, rice cakes, etc. contain gluten. ALso, if he has no villi, he should avoid all milk products until his intestines heal, which can be several months. The villi are...
  4. I just want to add some large-scale perspective here. Studies have shown that ingesting even 1/16 of a piece of bread daily is enough to cause intestinal damage, even in the absence of symptoms felt by the owner of the intestines! So that means, you might not FEEL like you are being affected by tiny amounts of gluten, but those tiny amounts are...
  5. I think the bigger problem is the family rather than the person with all the medical problems. They seem to think that it's all a question of her making poor choices (i.e., not wanting to be on bipolar meds, eating too many sweets, etc.). I don't think she's even heard of celiac, let alone its connection to all her medical issues--and they won't tell her...
  6. I read that heartburn that improves with milk consumption is often related to an H pylori bacterial infection--and bacterial infections can CAUSE villi damage. Celiac is not the only thing that can cause villi damage. Unfortunately, too much is unknown at this point. The official definition of celiac is damaged villi (that's why the endoscopy is the...
  7. This person (my friend's sister) has had years of bipolar disorder and poorly controlled diabetes. She is very overweight, and I believe she has a terrible time controlling her binge-eating, especially with sweets. She was recently hospitalized with anemia. I think that at the very least, they should attempt to rule out celiac, as I know there...
  8. I know it's a long shot, but could soy also be an issue? I do remember reading several posts from people who had to eliminate gluten, dairy, AND soy. (But hopefully, it's just gluten--the simpler, the better, right?)
  9. I've found that the easiest is to dip chicken tenders in cornstarch, then in beaten egg, then in corn MEAL (you can flavor that any way you like--garlic powder, herbs, cheese, whatever). Put each piece on a greased baking sheet, and then either drizzle with melted butter or spray the heck out of it with PAM. Bake at 400 for 25-20 minutes and you're done...
  10. Do you have anything in writing from them proving that they told you to reduce your course load? That would certainly help. If not, email whoever told you to reduce your course load, reminding them that they advised you to do this, and tell them what has happened to you. KEEP A COPY OF THIS EMAIL FOR YOUR OWN RECORDS. Always, always ALWAYS have a paper...
  11. Please be aware that vaccine reactions can cause eczema AND all kinds of other problems! I am not anit-vaccine, at least, not yet, but I do feel very strongly that only ONE vaccine should be given at a time, and that many of the current vaccines are not necessary. For example, hepatitis, which is transmitted mostly by shared needles and sexual contact,...
  12. My one gripe is that this Shari Lieberman is trying to make money off of people with celiac. Is there really any information in her book that you can't get for free on celiac.com and other similar sites?
  13. I take slices of peeled eggplant, dip in beaten egg (if you don't eat eggs, you could probably substitute smashed tofu or thinned out mashed beans), and then in a mix of corn meal, grated cheese, garlic powder, and crushed rosemary, and fry in vegetable oil on both sides until golden-brown and crispy.
  14. I've had very mixed experiences--some terrific, some horrible, like when 3 airlines in a row (all connecting flights on one trip from Zagreb to Pittsburgh, some on different airlines) insisted that nobody told them I needed a gluten-free meal (even though everything had been confirmed in advance), so there was nothing for me to eat--AND security in Zagreb...
  15. WOW WOWWOW!!!
  16. Don't forget that asthma can be triggered by reflux, too...
  17. I tried both, and they both tasted unpleasant to me. Must be just me! I heat the corn tortillas in PAM-ed skillet for a minute on each side, then spread them with something to act as glue (usually cream cheese) before putting anything else on. Then I fold them in half while still warm. It also helps that there is a Mexican store near me that makes...
  18. I've tried them, and thought that they had a very strong, slightly unpleasant flavor. Maybe it's just me... Anyway, I like corn tortillas better.
  19. I just couldn't resist the opportunity to write in COLOR! Hey, look at all the violinists on this page!!!
  20. Thanks for the tutorial!!
  21. My understanding is that it takes a minimum of 4 pieces of bread for 3-4 months to cause enough damage to be measured in the endoscopy. If his bloodwork was positive, then that's your answer right there. The biopsy only takes a couple of 1/4-inch samples out of 22 feet of intestine, so many of us question why it is even considered any kind of standard...
  22. Eliana, if your little girl's IgG and IgA are strongly positive, that means her immune system is producing antibodies specifically against GLUTEN. I wouldn't say she's on the gluten-free diet for no reason. That's one heckuva reason to stay on it for life! The question is what else is going on? I'm thinking you should post what she IS eating, and some...
  23. Thanks so much for the link! Their recipe for Mystery CHocolate Cake looks amazing. I don't think their show will get picked up by Food Network unless they make a lot of production changes, though--they talk to the "audience" as though the "audience" were a bunch of pre-schoolers rather than competent adults--very annoying!
  24. I think the exercise (and everything else in her day) might need to be extremely STRUCTURED--that seems to be a very, very important part of helping these kids manage. Even "free" time might need to be carefully structured.
  25. We had a wonderful time at Disney, every chef was very knowledgeable and helpful! Gluten-free waffles, gluten-free hamburger buns, even gluten-free brownies!!! I know I should have gotten chef names to post and thank, but I didn't--sorry!
