I am recently gluten-free myself and have found that for me the best way to deal with my "before" food cravings is to search do the legwork, fingerwork whatever it takes to find the replacement.... Yes I have had chocolate chip cookies, brownies, pizza and am currently on the lookout for crackers, my dintymore beef stew just isn't the same without my crackers...

One way to explain why you wont feel 100% right away is think of the gluten in your system as a toxic substance, it will take a bit to completely get rid of it, you will however notice one day down the road (different time frame for everyone) that WOW you feel great! NGG I hope your situation improves and I know that "OMG I am going to die" look... each year we get "temporary workers" here at the railroad, those that end up staying longer than others get that look when they find out about the tornado's... or in the wintertime, the "gee I need a winter coat" stupidity of wintertime is good also.

Cindy you can be happy about your 30 pound gain, I am happy with my 2 pound loss, however that reduced me 3 pants sizes!!! I feel better (not perfect yet but getting closer) I have more energy and have actually eaten more in the last 2 months than I did for the 6 months prior! -

Had "one of those days" at work and came home to a house that was a disaster! so I think I will skip the toe remedy and head for my bottle of tylenol, may however try the "hammer remedy" on the hubby when he gets home from work. -

I did use canola oil for my homemade chips, as recommended by the living gluten free for dummies book (thats where I got the recipe for them) The "frito's" says it uses corn oil the Taco shells used "hydrogenated soybean oil" I do realize corn is also a key ingredient in all three however I eat alot of corn, next to peas it would be my favorite veggie... -

As with everything else it depends on your body, how long you've lived with it not knowing and how much damage it has done....
