ARCHIVED Annalise Roberts' Coconut Cake
AndreaB replied to Fiddle-Faddle's topic in Gluten-Free Recipes & Cooking Tips
I just made her lemon coconut muffins. I subbed orange peel for the lemon peel and they still turned out great! This cookbook has lots of great looking recipes and I can't wait to try them. Buy the cookbook. It's well worth the price. Annalise Roberts answered my questions promptly also. To me, someone who takes the time to communicate with those... -
ARCHIVED Vinegar Substitutes
AndreaB replied to quantumsugar's topic in Gluten-Free Recipes & Cooking Tips
Lemon or Lime juice work just as well. You may need to experiment and adjust to taste. With your typical vinegar and oil just sub lemon or lime juice for the vinegar. If you are interested in specific salad dressing recipes, please post which kinds you like and your dietary restrictions and I'll see if I have any that would work. -
Lauren, Yes, I eat meat. Mainly chicken and beef with some salmon and turkey. We only buy the free range, natural or organic meats and wild fish. I also eat eggs again, also organic free range. Had gone back on dairy and have cut back down to just butter also organic. I have a mild allergy to it but butter subs are hard when you can't eat soy. ...

ARCHIVED Megan's Gagging Isn't Any Better
AndreaB replied to TCA's topic in Parents, Friends and Loved Ones of Celiacs
Tanya and the rest of you interested in bottled water. Aquafina is the better of the brands out there. There were a few others but she uses aquafina as it was one of the lesser expensive ones. Some of the more expensive ones are worse. There were only 3-4 bottles out of probably around 15 that scored low. Tanay, I hope all is going well for you... -

ARCHIVED Need A Substitute For Cheese
AndreaB replied to ArtGirl's topic in Gluten-Free Recipes & Cooking Tips
I have a recipe for cashew cheese. It calls for emes kosher gel but you could use gelatin instead I imagine. It needs to be frozen and you just grate what you need. It has good flavor but of course doesn't work like regular cheese. I would think it would work in casseroles, you may want to decrease liquid a tad. -
ARCHIVED Annalise Roberts' Coconut Cake
AndreaB replied to Fiddle-Faddle's topic in Gluten-Free Recipes & Cooking Tips
She doesn't use cornstarch in her mix for the pastry type stuff; muffins, sweet breads, scones, cakes, pies, cookies and some breads. She uses a mix that calls for cornstarch in some of her bread recipes. She doesn't use soy flour and a bread mix with bean flour is optional. She lists three variations for the bread flour mix. She does use buttermilk... -

OK you guys...I just emailed a person who might remember which brands were the good ones. Don't know when she'll get back to me. I also informed her about Megan so she can pray for her as well. -

Bottled water can be as bad or worse than tap water and can also be better, depending on the brand. I forget what the good brands were. Only about 4 of them. I saw a cooking show on 3ABN a few years back that had Barbara Kerr on and she was using a tester to test bottled water. -
ARCHIVED Omg...i Might Be On To Something
AndreaB replied to Rachel--24's topic in Food Intolerance & Leaky Gut
Went to my mom's on the 2nd for our first meal over there since going gluten free. She found bread for the kids which was good. She said we were being too picky when we brought out our own peanut butter for her to use. The dinner was wonderful though. My mother is a great cook. Make lemon coconut muffins today. Actually orange coconut since I... -
Danielle, That's awful about your cousins mommy having to go to Iraq. The military! Don't they believe that a mother or father should be home with the children? Have fun on Thursday. I too hope your sister has that night off. It would be awkward and depending on how old she is she might make a big deal about it.

ARCHIVED This Is Probably A Dumb Question But...............
AndreaB replied to Debbie65's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I haven't heard of potato starch being a no-no. It is used in a lot of gluten free flour mixes. If you have a problem with potatoes you may want to try something with potato starch to see if you react to the starch. It could probably be subbed for something else in recipes. I'm new at this and haven't tried any changes to recipes at this time. -
Carla, I have a rash on my thigh that still hasn't gone away. From what I understand they are triggered by allergies whether it be food or environmental. Did you eat anything different the last few days that could be an allergic flare up?

ARCHIVED Anyone With Allergies To Corn Have Problems With Xanthum Gum
AndreaB replied to a topic in Related Issues & Disorders
QUOTE(tarnalberry @ Apr 19 2006, 02:04 PM) Acid/base chemistry will get ya every time! As for the xanthum gum, where does the corn come in? I know the substance itself comes from the cell wall of a bacteria. Is the bacteria grown on corn? I'm not exactly sure, but from some of what I read yesterday at the Avoiding Corn group at delphi, corn... -
I second everything that Ursula said. I just recently learned about the metabolic type diet and it is the first one that has made sense. I am a former vegan who was a former ovo-vegetarian who was a former lacto-ovo vegetartian who was a former eat everything. The problem I had with the vegan diet is the reliance on soy or gluten to provide more variety...

ARCHIVED Megan's Gagging Isn't Any Better
AndreaB replied to TCA's topic in Parents, Friends and Loved Ones of Celiacs
That was a good thought Shai. Everyone responds to different things and at different amounts. MSG is also sprayed on both organic and non organic crops which could also pose a problem. Those who are extremely sensitive like Rachel--24 can't eat much because of that. Megan doesn't sound like she has an allergic reaction to that but it could be a whole... -
ARCHIVED Megan's Gagging Isn't Any Better
AndreaB replied to TCA's topic in Parents, Friends and Loved Ones of Celiacs
Shai, You are one of the lucky ones. I would rather supplement if I choose than have it forced on me in the water supply. Fluorine is necessary and available is some foods. Fluoride is on the crops as well so we can assume that we get some when we eat fresh fruits and veggies. -
ARCHIVED Megan's Gagging Isn't Any Better
AndreaB replied to TCA's topic in Parents, Friends and Loved Ones of Celiacs
Shai, That's not accurate about city water. It is in most cities and is still being fought in my hometown. Where we live now the level of fluoride is 2.5 (I forget the measurement). They like it to be under 4 but the person I bought my filter from said that 1.5 is where they usually like it to be so we were way above that. Even if cities don't add... -
ARCHIVED Megan's Gagging Isn't Any Better
AndreaB replied to TCA's topic in Parents, Friends and Loved Ones of Celiacs
Fluoride is a very controversial subject. We grew up with non fluoridated water. I have 10 cavities, my brother none. My husband was told by our hygenist that it depends on whether you have an acidic or alkaline mouth/body. My husband is also cavitiy free with non fluoridated water. Check out the following websites for more info about fluoride. You... -

AndreaB replied to TCA's topic in Parents, Friends and Loved Ones of Celiacs
Tanya, Call your water department if you are on city water to send a water report. Go to www.pureaircleanwater.com. The person who sells water filters is Jim McMahon. He is great and will only sell you what you need. We got a three stage Kitchen Defender from him. You can only run cold water through, which is typical of filters. The water is great... -
Kris, I agree with everyone else. Who needs the added stress to the body by going back on or remaining on gluten. I went to a holistic doctor for allergy tests and then went through enterolab after that. My regular doctor was willing to do a blood test based on a few past experiences but I had nothing consistant and don't believe I would have shown...
